What do you use the fresh mint for, other than mint sauce?

I love the flavour of mint and grow it quite successfully in the garden but apart from a couple of handfuls a year for mint sauce, I never use it.

What other ways are you all using it please?

Courgette, pea and mint soup
Stick some in with new potatoes or peas
Fresh mint tea - I just put a few sprigs in a cup and pour on hot water. Nice with a mix of peppermint (rounder, smoother leaves) and garden mint. Also good chilled when it's sunny!

I love watermelon, mint and feta salad. Normally add some cucumber, lime and chilli. Super delicious.

Everything above and as a garnish for puddings with raspberries. For example lemon and raspberry possets, raspberry flan which is: chocolate pastry, creamy lemon filling, raspberries on top, sifted icing sugar, decorated with mint leaves. Also works with a raspberry mousse or sorbet. Or a pudding I make which is strawberries, coated in sieved raspberry puree, a tiny drop of raspberry liquor, mint leaves and exquisite vanilla ice-cream.

Vietnamese summer rolls - I made these for the first time recently. They were surprisingly easy to make but you need to get to a Vietnamese/ Chinese supermarket / market to get your hands on the rice paper wrappers

How did you cook the pork? Is it really just a case of boiling it for 30 minutes or so? Seems so weird, but I've had the wrappers in the cupboard for ages. Really want to try these.

I find herb bags too big quite often though I do make many of the things pps have mentioned. I also have guineapigs so finishing mint is not an issue, they both love it.

parsley and mint chopped salad with homemade honey-mustard dressing. began making it when I did keto. Have stopped keto but I still eat this salad most days with dinner.

Use in Indian Tea, i steep water in it, i chew it raw instead of mints, and add a little to most Indian food as it really enhances the flavour (it’s especially nice combined with bitter flavours).

Crush the mint with a load of granulated sugar, then strain it through muslin with boiling water and boil down to make a mint cordial. Lovely on chocolate ice cream.
