Anyone have a fail safe brownie recipe?

I have just baked another batch of brownies that are an oily mess. To be fair I was expecting this time as I attempted to use up Easter eggs so it was Cadbury’s chocolate.
I make fantastic cupcakes, bake all the families birthday cakes and even do a cracking blondie but brownies I cannot master!
Does anyone have a recipe that I can steal and hide the embarrassment of my brownie failure?

Have you checked your oven temp with a thermometer? Is it definitely the recipe and not something mechanical/timing?

Thank you that’s a couple I can try! That sourdough one sounds amazing! My bread turns out alright so maybe that’s the trick I need.

I think so (but couldn’t be certain!). Everything else turns out alright apart from brownies with normal cooking times.

I’ve stuck the oily mess back in in the hope 5 more minutes works a miracle.

Nigella flourless brownies- leave out the walnuts if you don't like lumps, totally fine made with Bournville, doesn't need to be fancy dark chocolate!

I had a recommendation from a mumsnet poster a few years ago for Alice Medrichs brownies. They use cocoa powder rather than chocolate and always turn out delicious.
I also make the ones in Nigella Lawsons how to be a domestic goddess book, the recipe makes a huge amount of brownies so you'll probably want to scale it down, although they freeze really well if you make the whole thing.

Mary Berry's brownie recipe is foolproof. Everything goes into the bowl at the same time, mixed well and into the oven. Its so easy. I aways bake for less time so they are a bit gooey in the middle.

I’ve successfully done those bbc food food ones too. The difficulty with all brownies for me seems to be cooking time, I’ve had nigella ones take twice the time on the recipe.

Agree with PP, the Hummingbird recipe is foolproof and amazing. Best tip, take them out a minute or two early so they are extra squidgy.

Wow thank you! Lots of tips! I tried Googling and it gave me so many- it’s great to have some tried and tested ones to give a go! My house is going to be coming down with brownies this week- sod the diet! I’m liking the sound of the ones made with cocoa powder- I always think chocolate cakes more squishy (not using the m word) when it’s cocoa rather than melted chocolate. Also completely forgot about janespatisserie- that website helped me master the chocolate drip cake!
