Anyone have a fail safe brownie recipe?

I have just baked another batch of brownies that are an oily mess. To be fair I was expecting this time as I attempted to use up Easter eggs so it was Cadbury’s chocolate.
I make fantastic cupcakes, bake all the families birthday cakes and even do a cracking blondie but brownies I cannot master!
Does anyone have a recipe that I can steal and hide the embarrassment of my brownie failure?

The Good Housekeeping recipes are great for inexperienced bakers. Their ultimate chocolate brownies recipe was the first one I tried and they were phenomenal. They test and test again and again and all their recipes have worked for me.

Better Crocker packet ones! I am a half decent baker and I have yet to find any ones made from scratch that are as nice. I jazz them up by adding nuts, chocolate drizzles etc.

We’ve made four different versions of janes patisserie brownies and they seem fool proof so I’d definitely recommend them.

Another vote for Betty Crocker. I'm quite good at most forms of cookery, but BC chocolate brownie mix went on to my Go To Recipes file and Permanent Shopping List file about twenty years ago, shortly after the first and utterly disastrous effort at bringing a pile of cakes to the PTA fundraising sale back in Reception time. I was always terribly honest about it, whenever complimented about my wonderful chocolate brownies I did always say to thank nice Mr Tesco for selling Amazing Ms Crocker Brownie Mix Grin

The Betty Crocker ones are the only ones worth doing.

I made a load of them for my sons schools fun day and everyone commented they were the best brownies they’d ever had and I didn’t have the heart to say they’d come out of a packet mix!!

This is my recipe taken bits and pieces from others over the years hence the vagueness! Check them after twenty and turn the tray of your oven is like mine... Usually takes 30 minutes but 40 in my mum's oven 🤷‍♀️

Hummingbird bakery recipe gets my vote.
One bowl.
Melt, mix, bake.
I melt the butter and choc in the microwave to make it even easier.
Perfect brownies every time.

Sometimes I do half plain, half self-raising flour to get a slightly more cake brownies. Or I might use flavoured chocolate - Lidl do a yummy raspberry dark chocolate bar that makes a yummy brownie.

This recipe is my go to, Laura n the Kitchen fudgy brownies.

I will say though that imo most recipes for brownies are scaled down so no one has a heart attack about too much butter, too much sugar, too much chocolate and there's not enough mixture for the tin, which makes them cakey and hefty in a bad way

If you are using an 8x8 tin and this recipe you WILL need to scale it up by 50% so, 3 eggs, 1 cup of flour, 1 and a half of sugar...you can do the rest of the maths!

Other than that this recipe never fails and is very easy going...if you want pecan and white chocolate chip brownies, add a generous handful of each.

Creme Egg brownies? Smash up some big ones and push them into the tin artfully, or stir in a bag of mini ones
Want chocolate chunks...chop it up and fold it through last minute
AfterEight brownies ...put in half the mix, cover with aftereights, cover with remaining mix

Nigella domestic goddess ones are foolproof but like the previous poster said, best if you have a lot of mouths to feed as the recipe makes a lot.

I have made quite a few of the highly recommended ones which are brilliant. For pure indulgence I have quite often done Hugh Fernley Whittingstall triple chocolate, think it is a river cottage book, you whisk whites and yolks separately. They are gorgeous. Can not find a link to though. Will look through my books tomorrow. Ones I have made with just cocoa can be lovely too.

This is my go to recipe, it’s gluten free but don’t let that put you off! I made it for a gluten intolerant friend but now make it all the time! It’s VERY easy to make.

The key to good brownies is in the baking though - they have to be in for just the right amount of time.

I've altered the cadbury one from their website (and use galaxy) so mine is
275g caster sugar
3 eggs
200g chocolate
200g Galaxy Chocolate
100g plain flour
60g cocoa powder

mix the sugar and eggs,
melt the chocolate and butter together (I do it in the microwave)
Pour into the sugar and egg mix
mix it together
add the flour and cocoa powder
FOLD the mixture (Rather than mix it)
Whack it in the oven at 180 for 35 minutes (NOTE it took a while to get the timing right for me as this entirely depends on the oven being used)

The key with brownies is you want to make sure theres enough air in the mixture (hence the fold rather than mix)..the mixture should be bubbling in the pan

Mine always go down well :)

Really fast to make, I add about 3/4tsp of chipotle Chili powder and I’ve never bothered with the icing.

I’ve just given BBC good food ones a go and they are delicious- not a pool of oil in sight (thank god!). Thank you for all your recipe suggestions- I’m going to work my way down the list!
