Things to bake using self raising flour?

I have an unopened bag of SR flour which goes out of date soon. I am not much of a cook/baker but want to put it to use! All recipes I can find seem to be just for cakes. Any recipes for savoury things or non cake related bakes?

I make pastry with SR flour. I also use lard in it. Turns out lovely!

In fact, I use SR flour for just about everything except bread.

You can use it in crumble - won't matter if it's SR (although not needed).

Any sponge cake or pudding. Think pineapple upside down cake and creme fraiche. ☺

Or blinis for canapes. Top with smoked salmon, cream cheese, taramasalata, tapenade etc.

You can use it to make the thicker, american-style pancakes. There is also a Jamie Oliver recipe for quick flatbread which is just self raising flour and Greek yoghurt which are tasty, I cook them on a bbq when camping and brush them with garlic butter.
From experience, it doesn't work for toad in the hole, it ends up more like toad in the sponge cake!

I wouldn't worry too much about the best before date, as long as it is stored somewhere dry and it still smells fresh and there are no notes it should be fine for months.

I really wouldn't worry about it going out of date. It's just a best before date - the flour will still be absolutely fine.

Pancakes: 1 egg, 1 cup/mug flour, 1 cup/mug milk.

You can make naan bread (I use it as a basic flatbread) by mixing SR flour and yogurt to a pretty sticky dough, rolling on floured counter and fry in a dry frying pan.

Or in almost recipes that need plain flour and omit or reduce the baking powder.

Flour won't actually "go off" as soon as it reaches its best before date, it'll last for months after that

Cake. Delicious cake

Heat oven to Gas mark 6

Line cake tin with paper, smear with butter and sprinkle with sugar. Or set out lots of paper ' fairy cake' cases

Creme together 5oz sugar and 5oz butter until soft and fluffy. Add three eggs, stirring between each one until fully incorporated

Add 7oz sieved SF flour and stir quickly, add a splash of milk of it seems to be dry.

Pour into it and put in over for about 20mjns. It may need more, you will hear a distinctive 'singing' when you take it out of the oven to check readiness. When it has come away front the sides of the tin and is no longer 'singing' it is done.

Enjoy.

Flavourings

Splash vanilla in mixture. Decorate with creme and fresh fruit / red jam.

Add lemon rind to flour. Juice three lemons and add sugar, pour over cake as soon as it comes out of the oven. Leave in tin to cool. Pour over thin icing make of icing sugar and lemon juice.

Replace some flour with cocoa powder and add handful chocolate chips to flour. Add vanilla or chocolate icing.

Add handful dried fruit to flour, plus mixed spice.

If you're feeling daring, this recipe is amazing for anyone who's not a baker. It's one of those 'oh my god' bakes but ridiculously easy to make.

I melt the butter, sugar and honey (I use golden syrup) together on a large pot and then mix the flour and oats straight into the pot. The only tiny faff is getting the apple layer in the middle, so I often throw the apple into the mix too. Just pick out any bits of apple sticking out at the top as they'll burn. For variation, I've swapped out the raisins for dried apricots or nuts.

I do line the tin by pushing a sheet baking paper in - no fancy folding. It's always fine. And you don't have to wash the tin.

I'm a seriously lazy baker and I love melt and mix recipes.

Mix flour with oil, sat and warm water until you get dough and microwave until it turns into little soft doughy ballls to eat with cheese or dips.. can also add any herbs/spices you want.

If you search for ‘pancake recipe using self raising flour’ (as an example), you will get appropriate answers which is very helpful.

But there really isn’t any reason to rush to use it - the flour will be fine for ages yet.
