What to do with 14 courgettes - no rude suggestions!!!!

I erred on my sainsburys shop and thought I had ordered 4 courgettes but got 4 packs and now have 14 -and are organic so won't last.
apart from the obvious roasted med veg every night what else can I do with them. My sister has a friend who makes courgette cake as opposed to carrot cake ! Any ideas please

Courgette and mint soup.

Top and tail the courgettes. Cut into chunks.

Finely chop some onions and sweat them in a mixture of butter and olive oil on a lowish heat until soft and translucent (about 10-15 minutes)

Sweat the courgettes for about 10 minutes.

Add quality stock and, if you have some, some chopped mint. Cook for about 20 minutes. Season with black pepper. Add some more chopped mint and blend in a food processor or mouli (a mouli is better, as it gives you a smoother texture). Re-heat gently.

If you have any recipes for the 4kg of red onions I got last week (instead of the 4 onions I intended to order), I'd be grateful!

so what. long as it has a good date on them then they should take them back. just say you made a mistake ordering them. the joys of retail. i'm always returning things lol.

cocoa courgette muffins
280 g plain flour, 2 tsp baking powder, 1/2 tsp of bicarb, 1/2 tsp salt, 2 tsp of cinnamon, 3 tab sp of cocoa powder, 1 egg, 110-140 g of soft brown sugar, 2 floz of milk, vanilla essence, 340 g of finely grated courgette, 3 floz of vegetable oil, 85g of raisins.
sift together flour, baking powder, bicarb, salt, cinnamon and cocoa powder set aside.
beat egg. add sugar, milk, vanilla, courgette and oil stir well.
pour all wet mixture into dry stir till just combined. batter will be lumpy but no dry flour should be visible.
spoon into tins bake for 20-25 minutes at 190
I made these last week without the raisins and they were really easy to make and really yummy

Courgette and Tomato Gratin

Serves 2

4 medium courgettes, sliced
2 tbspn olive oil
1 glove of garlic, crushed
4 oz cheese (Cheddar or Mozarella) sliced
4 large tomatoes, skinned and sliced (they're easy to skin if you put them into boiling water for a few minutes)
4 tablespoons grated parmesan (or more Cheddar)
1 teaspoon dried oregano

In a large frying pan, heat the oil and sautee the courgettes and garlic until the courgettes are golden (don't let them burn).

Arrange layers of courgettes, cheese slices and tomatoes in a casserole dish

Sprinkle on the grated parmesan or Cheddar, oregano, salt and pepper and bake at 190c/375F/Gas Mark 5 for 30 minutes.

wigwambam - I know that recipe and used to make it all the time but haven't for years but will make it tonight and have it with some nice bread .I will be going out to buy some more at this rate

My mum used to make a chocolate and courgette cake which was gorgeous and moist - probabaly like the muffin recipe you've got here. Just searched for one and came up with the following:

2 1/2 cup Flour 2 1/2 tsp Baking powder 1/2 tsp Bicarbonate of soda 1 tsp Cinnamon 3/4 cup Margerine 1/2 cup Cocoa 3 Eggs 1 3/4 cup Sugar 2 tsp Vanilla 2 tsp Grated orange peel 2 cups Grated courgette 1/2 cup Milk 1 cup Chopped nuts Preheat oven to 350 degrees F. Grease a 9x13 cake pan. Sift together flour, baking powder, bicarbonate of soda, and cinnamon. Set aside. Cream together margarine, cocoa, and sugar. Add eggs one at a time, mixing well after each addition. Combine vanilla, orange peel, and courgette, then stir into first mixture. Add dry ingredients, alternating with milk, then add nuts. Pour into pan and bake for 50 minutes.

I have done that so many times, feezy - I ended up with 4 packets of leeks once (16 leeks). And one time I thought I had asked for 8 potatoes and I ended up with 8kgs of potatoes. Sadly, not the same shop or I could have made truckloads of leek and potato soup.
