What shall I make with the inside of the pumpkin then???

Myself & DS have just made our pumpkin face so I have a nice big bowl of pumpkin gooo.

Not keen on soup so what else can I make with it?

i made risotto. i roasted the pumpkin flesh in the oven with olive oil, a bit of salt & grated nutmeg. squidged it about a bit & stirred it through a risotto i'd made whilst it was roasting. oh, i added cream right at the end. served with parmesan for the children, chilli & bacon for me.

You can't do anything edible with the innards, IMO, you have to get ANOTHER pumpkin and use the shell. and (again IMO)why bother. (not a fan).

What do you do with the inside of a melon?

oh yeah, the innards, nope they won't work.

here's the quiche recipe anyway, it's easy and very tasty.

1 cup wholemeal plain flour
1 tsp baking powder
125g butter
1 egg yolk
2 tsp lemon juice approx

Rub butter into flour, add egg yolk and enough lemon juice to combine. Cover, refrigerate 30 mins. Roll pastry to fit 23cm flan tin. Bake in mod hot oven 10 minutes.

Filling
500g pumpkin
4 rashers bacon
3 shallots
1 clove garlic
250g feta cheese
3 eggs
2/3 cup cream
2 tbsp chopped parsley
pepper

boil pumpkin until tender, drain, cool. Chop bacon finely, cook in pan until crisp. Add chopped shallots and crushed garlic.
Push cheese and pumpkin through sieve (or mash), add lightly beaten eggs, cream, parsely and pepper.
Mix well, add bacon mixture.

Pour filling into case, bake in moderate oven approx 30mins.

Hmm, pumpkin cake is sounding the winner so far.
The quiche might be nice but doesn't the flavour improve when you take the pumpkin out??

I've been feeling bad for years for chucking the stuff out and it sounds like I wasn't making too much of a mistake after all then.

Pumpkin is horrible except in Pumpkin Pie where all the ginger and syrup hides the taste.

The flabby slimy flesh from inside huge carving pumpkins is even more horrible.

IMO.

i love pumpkin. i'm astounded that i can only buy it once/yr in the uk in october! i have substituted the pumpkin for butternut squash in the quiche, but that makes it too sweet.

trust me, give it a go. i've served it up to english people, they love it, even after telling them what's in it.

I do roast the seeds with salt before composting the rest. Terrifically good roughage!

Am considering muffins if I get a usable yield of flesh from the pumpkin - it seems an unusually thick one.

DD is downstairs happily excavating the seeds and gungy bit with a spoon.

DH famously uses the insides for curry for our firework party this weekend. He just shoves it all in a huge pot with loads of root veg and a couple of handfuls of split peas. Tis delish and there's usually enough to last us well into December!

You can't do anything with the goo, you just chuck it. Unless you have cut out a massive face from a massive pumpkin you won't have any flesh to cook with.

You could halve the recipe or scale it down for three eggs - the cake is supposed to make 15 generous slices!

Pumpkin is a great vegetable.
I also make pasta sauce with it:
sautee in olive oil pumpkin, garlic (at least 2 cloves) and bacon bits. Meanwhile boil water and cook pasta.
When pasta is nearly ready add some cream to the sauce and if you like sprinkle mint and pepper. we loveit.

I got enough usable pumpkin to roast at the same time as the seeds and put in a single serving of risotto (DD had eaten and DH is poorly and only wanted fruit).

So it worked out very well.

Risotto was simply butter-fried garlic and rice, then the pumpkin with dried herbs and some sheeps cheese. Simple and really very nice!

Oh dear, I threw the seeds out with all the stringy stuff as I thought that was a non-starter.
Have now remembered that my over thermostat has gone so my cakes may be a bit crispy round the edges.
I still might give them a go tomorrow though.

I always scrape as much flesh out of the pumpkin as I can so that the candle shines through a bit. Is that not the norm then?
