Just as the title says, really. Does anyone have any good slow cooker recipes that need minimal prep/pre cooking? Finding the time to cook is a challenge at the moment and I could do with some easy food inspiration!

This bbq pulled gammon is one of my favourites. I have skipped the boiling the gammon step, but it doesn't "pull" so well and is quite salty.

There was a slow cooker thread a few weeks ago. I've recently bought a crockpot and its 100% faster than my previous slow cooker. I just throw everything in with a few exceptions:

  • I always brown meat beforehand in a frypan till its caramelised. It adds colour and flavour, but not an absolute essential
  • I always pre-soak dried pules like split peas, soup mix etc.

Some of my favourites are ox tail soup/stew, beef cheek stew, pea/ham soup made with a pork knuckle, chicken noodle soup, red or green thai curry.

Sometimes I let it cook overnight, then depending on the recipe, add in some frozen peas for colour, or button mushrooms. If put in at the beginning, they loose colour and shink. I also made lasagne in the slow cooker, but it doesnt save any prep time at all.

I really enjoyed this but I just served it on rice. Have a look at slow cooker dump bags and you'll get plenty of ideas.

Stew- through stock, most peeled veg in and leave. 6hr
Spaghetti bol- mince, garlic, onion, pasta sauce, tinned tomatoes in and leave 6 hr low
Hunters chicken- chicken breast, bbq sauce, cheese. Wrap chicken in bacon if you like.
Pesto pasta- chicken, pesto sauce, diced bacon, sundries tomatoes. 4 hrs high. Add cream and stir.

200g dry pasta, 500g beef mince or beefburgers or sausages. Chopped root veg either fresh or a bag of frozen stew veg. Jar of pasta bake sauce plus 2/3 of the jar of extra water. 8 hours low or 4 hours high.

baked beans, chicken or pork, squirt of tom sauce, garlic, herbs, dash of white wine, bit of stock say 120ml, and then some cornflour in water towards the end if its too runny. Its a variant of that french dish with beans that i cant remember.

I always bung in whatever is at the bottom of the fridge! Did a sausage casserole yesterday which everyone loved. Don't need to peel veg, just wash and chop. Brown any meat first and cook for 6 hours. Throw lots of herbs or spices in and a pint of stock. Gorgeous.

Lb Lamb chunks
Tin chickpeas
Tsp Salt and pepper
Tsp Cumin
Tsp Chilli or one chopped
Handful Dried apricots
Tbsp Honey
Big bunch chopped coriander
Sliced large onion 2/3 cloves garlic
Serve with couscous or rice, toasted flaked almond and more coriander pomegranate seeds.
Really delicious and it it really is chop and bung rather than having to brown.
