Does anyone have any good meals that are done in one pot or as an oven tray bake please?

I do a thing where I fry onion, pepper and other veg that I fancy then put rice and stock in and some paprika and then chicken thighs on top then oil oven for 40 minutes

I make this all the time, and it’s lovely. I don’t bother with bacon lardons and I only put shallots (or onions) in if I have them. I use dried oregano too. Oh and I only put wine in if I have any open.

onions, chunks of squash, garlic cloves, sausages, tossed in oil and seasoning (I use paprika and oregano) . Add sliced apple after 10 mins then a load of kale on top near the end to go crispy. serve with honey and mustard dressing.

Also sausage casserole with sausages, onions, garlic, green lentils, tin of tomatoes, tin of butter beans, chopped pepper and mushroom. cook with lid off to thicken the sauce.

Chicken thighs, onions cut into chunks, peppers quartered, new potatoes halved, small butternut squash in 1cm strips, 2tsp Cajun seasoning, olive oil. Bake for 40 mins then drizzle over couple of spoons of honey and bake 5-10 mins more until squash and chicken cooked through. Serve with a green salad or steamed beans if desired

I actually invented one of my own the other day:

  • marinade 4 salmon fillets in a tsp each of grain mustard, English mustard, olive oil, lemon juice and a Tbsp of honey
  • cut 500g potatoes into chunks the size of a big strawberry, salt/pep/olive oil, roast on a big tray or two smaller trays for 10 mins at 200c (180c fan) - make sure there is space to all be in one layer once the sprouts are added, the potatoes shouldn't be touching
  • add 500g sprouts cut in half and a large onion in wedges, give the trays a good shake so all in one layer - roast another 10 mins
  • finally, lay the salmon fillets across the top of the sprouts/onion/potato and roast a final 10 mins.

Fish, potatoes, veg all in one and the kids liked it! I think the honey helped Grin

Another option is cassoulet, I serve with crusty bread, or this:

Fry pork mince, chilli and garlic finely chopped chopped and red pepper add 120g rice, a stock cube, lemongrass bashed, zest of a lime, 200ml boiling water, cook for 10 mins add pak Choi or shredded Chinese leaf or spinach, grated ginger, soy sauce to taste and finish cooking the rice (2 mins) top with chopped spring onions

Almost cooked potatoes crushed / bashed up and tossed in salt and olive oil. Keep the skin on if you want
Cherry tomatoes (lots)
Parboiled peas
Crispy bacon / lardons (almost cooked but not ultra crispy)
Slow cooked onion
Salt and pepper to taste

Mix it all up spread out on a tray and cook in a hot oven for about 15 minutes until tomatoes have popped and bacon is crispy , potatoes hot through

It’s delicious with some crusty bread

Also salmon fillets on top of some al dente pasta that’s been mixed with anchovies, cherry tomatoes and some green beans. Put the salmon steaks on top and put mixture of oilfield pile and lemon juice on.
Twenty minutes in a hot oven.

I use this recipe as a base, but use root veg at this time of year, butter beans, and spice it with fennel and cumin. Serve with mashed potatoes.

Roughly chop onion and eating apples, carrots, potatoes and parsnips and add a little oil and put in the oven for 20 mins, the sprinkle on dry paxo stuffing (small) box then lay on top pork chops or loin chops and back until the oven until chops are cooked I turn the chops once, once dished up make the gravy in the tray to get all the crispy bits delicious

I do Nigella's chicken thighs, sausages, quartered onions, half lemon, sage, Worcester sauce. Roast for about 40 minutes. I sprinkle sage and onion stuffing over it as well. Make gravy with the juices, it's gorgeous.

I second this recommendation, I have dozens of cookbooks and these are the ones I use most often. The cauliflower & kale cheese from the Green (I think) Roasting Tin is the best version of cauliflower cheese I’ve ever tasted.

Jambalaya.
Fry chicken and chorizo, add onions and celery, then add red pepper and garlic, then add a tin of chopped tomato, cayenne pepper and 200mls of chicken sticks, then 150grams of basmati rice. Bring the boil, lid on, turn down to lowest heat possible and cook for 15 mins (stir it to make sure the rice doesnt stick). Take it off the heat and leave to sit for 10 minutes.

(Mine serves 2 adults, or 2 adult and 2 primary aged kids. So add more as needed).
