The cookbook "from the oven to the table" by Diana Henry is brilliant for these kinds of meals.
her recipes are full of alcohol And expensive ingredients.

I don’t think they are? I’ve got that book too and not noticed it anyway. There’s one with sherry I remember. I’m doing one from there tonight which is sausages with apples and blackberries.

Chicken thighs, chopped onions, garlic, red peppers, chorizo and garlic, sliced new potatoes and hot chill sauce to taste. Cook for 1.5-2 hours.

Yes I thought I would, but I didnt get on with the Diana Henry book and have only used one or two recipes from it. There's a lot of meat with fruit recipes which I am not keen on and some obscure combinations and ingredients. I think the Hairy Bikers book is much better and do-able in terms of ingredients and the recipes are not short on flavour either. I haven't come across the Roasting Tin books before this thread , so will be interested to try those too.

  1. Soften an onion with a little chopped bacon , add enough sausages for your family , brown slightly and then add tinned tomatoes and tinned -
Rinsed cannellini beans , ( for 4 of us I usually use 1 tin tomatoes and 2 of beans) desert spoon of Dijon mustard and simmer for at least an hour; it is v forgiving and can be augmented with veg / available beans very easily.
  1. Tray bake with salmon fillets , loads of green veg eg French beans , asparagus in season, tender stem broccoli, lemon squeezed iver, black olives , olive oil and anchovies. Bake in moderate oven for about 20 mins( Jamie recipie originally)
  2. Chicken thighs with Charlotte potatoes, tomato, lemon ,
4.roast veg; BNS/ onions/ tomato/ beetroot/ red pepper; when nearly cooked slice halloumi on top and drizzle with a little balsamic
  1. Sliced potatoes seasoned and mixed with oliv oil and a bit of thyme, toast until nearly cooked and then put white fish eg cod on top for last 15 mins
  2. A fay
ripley recipie for chicken and flageolet beans
  1. Thickly slice about 8 red onions and 6 leeks ; mix with olive oil and thyme . Nestle enough sausages ( ideally lightly browned ) in the veg and roast on mod/ hot oven for about an hour( check from time to time that it isn't burning)

A couple of veggie traybakes I’ve made recently:
Sweet potato (cube & bake for ~20mins) then add sliced red onion, butter beans, kale/greens - toss with olive oil and balsamic vinegar, some fresh/dried herbs - can add feta right at the end.
Slices of squash (cook for ~30mins) add chard, cream, black pepper and top with a mix of breadcrumbs with lemon zest& Parmesan. Bake again until top goes crunchy.

An old Nigella Lawson recipe for one-pan chicken. Cube some chicken and potatoes, chop peppers and onions (and any other veg really), oil, season, shove in oven and leave.
Good with a green salad or green leafy veg.

And I concur with the praise for the 'Roasting Tin' series. I like the veggie one.

Random fridge veg; peppers, onions, carrots, kale. Top with chopped chicken or any meat or fish with some flavouring, Chinese, BBq, lemon pepper etc. Roast for 30mins. So delicious.

You may find your DC prefer roasted veg Minipie because roasting brings out the sweetness in the veg. You could maybe start them off with roasted root veg and proceed from there. Vegetables like sweet potatoes and butternut squash usually appeal to children. They both go well with chicken legs and thighs and thyme or sage.

I don't cook anything too fussy but I love pork chops, baby potatoes and root veg roasted for 50 mins in a little stock and seasoning (something like a sticky chicken or bbq)

Or braised steak and root veg

I second the Rukmini Iyer books - love them.

We also like www.bbc.co.uk/food/recipes/chicken_and_rice_bake_97733 although I prefer it with chicken thighs because I'm not a fan of drumsticks.

Been making this one www.jamieoliver.com/recipes/chicken-recipes/one-tray-bake/ for years too. It's really good.

Thanks Hampotsandonions but weirdly mine are the other way round. They are good with most green veg but not so keen on the sweet roasted ones! Except parsnips. However, I can always do some green veg on the side I guess, just makes it slightly less one-pot.

So do I, love it. Sometimes I use tinned pomodorino tomatoes or chuck in any left over pasta sauce.

I do sausages (honey garlic or mild Italian are most popular). In a baking tray with sweet potato & red onion. Bake for 30mins then mix up honey & grainy mustard pour over, back in the oven for 20-30mins. As soon as I take the tray out of the oven I dump load of spinach on, it wilts with the heat. Fast & tasty.

or traditional scottish stovies:

onion chopped into decent sized bits (about an inch square-ish) , you can use sausage, or left over beef or lamb roast (or even a tin of corned beef) and lots of potatoes cut into different sized chunks, most about an inch square but some smaller. then you need some watery gravy or stock.

If using saw sausage then you want them cut into chunks and you want to fry the onions and the sausage for a bit and then add in the potatoes, if using left over roast then cook the onions and then add in the cooked meat and potatoes. Add stock/light gravy until almost at the top of the ingredients, add seasoning, salt and a good amount of pepper, bring to the boil and simmer, stirring occasionally until the potatoes are soft, some have dissolved and the liquid is more or less gone. If using tinned meat then cook it with just the onions and potatoes and stir in the chopped up tinned meat just at the end so it melts in and is warmed through. Serve with a drizzle of HP sauce and crusty bread.

Not useful for tonight but the Doctor"s Kitchen 3-2-1 recipes are good.
