Glut of parsnips-no soup please!

My veg box this week seems to have a double portion of parsnips. The freezer already has a load of soup and I’ve eaten my fill of roasted parsnips over Christmas.

Any suggestions? Must be veggie or adaptable.

You can make parsnip cake (along the lines of carrot cake), parsnip puree is nice as an accompaniment - I mash with cream and nutmeg, or a bit of curry powder.

parsnip and carrot mash.

Delicious as an alternative ot potatoes. I often serve with a dish that has some carbohydrates but not enough for dh, so a pie with a pastry crust.

Just boil and mash, but it needs a good dollop or two of butter.

Dauphinoise, instead of potatoes? Or curry, parsnips make a good curry with some greens to cut through the sweetness...

Look at Delia online. She has a scrumptious recipe for a parsnip and cheese roulade. I make it for my veggie DD at Christmas.

Yes to parsnip and carrot cake! I often make a batch and freeze individual portions (in yorkshire pud tin then decant into box or bag). Really nice with ginger.

Winter veg casserole.

1kg of veg (potatoes, sweet potatoes, carrots, parsnip, onion, turnip etc) cut into chunks and browned in a pan

About 300ml of stock (chicken or veg)
2tbsp plain flour
Lemon juice and fresh thyme.

In a casserole dish in oven at 160 for 2 hours.

That’s the basic recipe. It’s can be adjusted to whatever veg you have. I like a bit of grated cheese on top to serve or some soured cream and chives. Or add garlic or cumin or curry powder to make it a bit different and to your taste.

That parsnip roulade has been on my list to try for ages. I’ve got shepherd’s pie filling in the freezer-I topped it with swede last time so don’t know why I didn’t think of parsnip on top, great idea. Parsnip and carrot cake sounds delicious. I don’t think I’ve tried parsnip curry and love that idea, plus I’ve got a bag of collard greens to go on the side. Tray bakes and crisps are definitely an appealing idea too.

Which one first?!!! I think I might need more parsnips...

I am tutting at you @awwkkwwaard. Grin. Maple parsnip is a favourite here. I’ll forgive you for what would usually be a great suggestion. The freezer is absolutely full and I can’t face more parsnip soup after eating it all last week.

That casseroles sounds lovely. That’s on the very long list now too!

Sarah Brown (vegetarian cookbook from about thirty years ago) does a fabulous parsnip and cashew nut roast which is still the best nut roast dish I've ever had.

Parsnip crisps - delicious and you can use up absolutely loads really easily.
Just use a potato peeler (unless you have a mandolin). toss the shavings in olive oil and salt, and put them in a high-ish oven for 20 mins or so. You need to keep an eye on them as they can burn in the blink of an eye.

I did root vegetable fritters last night. A mix of parsnip, carrots and potatoes grated and squeezed to get the excess liquid out, with egg and a couple of tablespoons of flour. Mix and fry. Went down well with the DC.

Parsnip, sage and Parmesan bread from Delia to go with soup, made it quite a few times. It's a quick bread so easy but best eaten warm on the day link here

Usually do J Oliver parsnip and chestnut tart Tatin over Christmas, good for a winters lunch here
