Roast potatoes without parboiling

I was watching John & Lisa's kitchen yesterday and they were doing a tray bake Christmas Dinner.

I always par boil my potatoes/veg but they didn't and just put all the veg in to roast for an hour.
I'm tempted to give it a go to save on pot washing...has anyone tried this?
Does the veg all cook through and not burn on the outside?

Don't.

(If possible, don't par boil, stick them in a steamer instead, as that makes them the perfect texture for roasting).

I think they’re rank not parboiling , like flat iyswim.. I like the crunch outside fluffy in the middle which I think you can only get with parboiling and then shaking them up a bit , rest over a colander over the dry pot with the heat from the hob kinda drying them out a bit

Growing up my parents both just roasted potatoes from raw...they came out fine. I prefer them parboiled but they are just fine if you don't

I've only started parboiling in recent years - did it the other way previously and always turned out fine, as did my DM's before me. Only parboil now to speed it up a bit.

Traybakes are different - they’re not real roast potatoes and won’t soak up gravy properly but they’re perfectly edible.

I never bother parboiling any more, I still love love love the way my roasties come out. And I tell you what, I don’t even bother peeling the spuds now - game changer.

Put the pan in the oven for 15 mins with lard / dripping in and teh oven o full.

Put in potatoes and make sure they are coated with fat - leave for 15 mins.

Turn over and baste leave for another 15 mins.

serve.

I do occasionally skip parboiling, briefly think ‘that’s so much less faff’ and congratulate myself on less dishes.

All of which fades as I take them out of t he oven and vanishes completely with the first bite.

The rest of the meal is seasoned with regret.

If you don’t peel them it would be pointless parboiling then since loads of the skin would come off anyway Grin
I like unpeeled potatoes roasted without parboiling but proper roast potatoes are incomparably better for a quick parboil of the peeled spuds. I’ve also tried them steamed beforehand and this gives great results too.

Before you put them in the hot goose fat / dripping a quick dusting of that roast potatoes seasoning is really nice on them too

It’s okay with sweet potatoes - but not with standard potatoes. My mum used to put raw potatoes in the oven with bits of lard on them. My stomach still turns at the memory....

I find the outside is more chewy than crispy if you don't par boil

I'm going to steam them & bash them about a bit before putting them in the oven.

I have roast potatoes once a year (diabetic, don't eat potatoes anymore, except for Christmas).

I can wash one pot for fluffy roasters!!

I thought this was a good cheat but after trying I wouldn't recommend. They were awful.

I like to do the veg prep on Xmas eve - can I oar boil on Xmas eve? I assume they'll just go black?

For a change from the normal try this

Boil new potatoes and drain.

Get a fork and slightly squash the potatoes just until the skin splits then roast.

I always parboil a whole bag of potatoes at the same time (in my massive casserole pan) and then shake them to fluff the edges, then (when they're cold) bung them in a freezer bag to freeze. Then whenever you want a roast, you just get however many you want out of the freezer and roast from frozen. Bingo. And the roasties are better after being frozen.

My mum does this for Christmas every year (one less thing to do), but I don't understand why she doesn't keep a stash in the freezer all year round. It's a game changer.
