Chestnuts - your recipe ideas please (no stuffing )

I love these just boiled then roasted in the oven. But I'm sure there must be more interesting things to do with them. (Not interested in stuffing as I'm the only one who likes stuffing)

So bring your soups, nut roasts et al please !

here's an americanised version - uses chestnut puree www.epicurious.com/recipes/food/views/236621

Can type out anglicised original if you'd wish (can't remember what you use instead of graham crakers - digestives prob but can look that up).

Will look up soup recipe too.

Oooh, chestnuts en croute!

I don't think I made this from a recipe, just made it up. For a dinner for a vegan friend.

Puff pastry (the ready made stuff - and it's veggie, if that is an issue),
Red wine sauce (made with softened onions, herbs, fresh parsley, thickened a little with cornflour)
Big dark field mushrooms
Chestnuts

Line baking tin or ovenproof dish with a layer of pastry
Put in chestnuts and mushrooms
Pour on some sauce
Put pastry top on in lattice design
Cook as directed on pastry packet until it all looks hot and cooked
Serve with more red wine sauce (maybe a bit more diluted) fresh parsley nice greens or salad.

What's that fabulous desert with layers of meringue and chestnut pureee and cream? (but can you make chestnut puree from chestnuts yourself or does it only come in tins?)
I wnoder if it was a proper recipe - I'll look

My mum makes them into a lovely puree and has it mixed with plain youghurt for breakfast, it is delicious. Haven't got a recipe though .

i make achestnut and mushroom gravy for a roast
make gravy as usual and add the vacuum packed chestnuts and a splash of port
it is really nice

Wheelybug - possible. I haven't got any Nigella books and i don't think she'd do anything as crass as the cornflour, would she? if there is a Nigella recipe i'd like to see it as it is bound to be fab and superior.
I think mine was based on something we saw in a rather grim vegan book.

what's the difference between conkers and chestnuts that you can roast then?

And the cases are more prickly, less spiky.

chestnuts are flat on one side, not spherical. And more matt, not shiny.
