Lockdown meals that aren't roasts!

So now I'm not running the DC to their various activities on Sundays, I have time to cook. I've made more roast dinners this year than the past five years and we love them but I want to give them a break to work up to Christmas. What other meals can I make that take a bit longer but are well worth the effort?

Anything with lots of sides so it’s a bit of a feast- curry and side dishes, Moroccan stew and sides etc

Curries are a good idea, lasagne is normally my 'go to' but I've made us sick of mince based meals this year. Enchilladas could work though.

I like lamb a lot so tagine could be a good one too. I just want to make our meals more of an event while I've got the time, so something with lots of sides is a good idea.

Couscous, lamb and tagine
Fajitas, nachos and assorted dips and sides
Homemade kebabs - google lamb kebab recipe with minced lamb, plus some chicken on skewers, serve with assorted salad, homemade coleslaw, pitta bread and chunky chips.

I made these ribs yesterday with rice, corn, coleslaw and stuffed jackets. Would have done cornbread but no one else would eat it. Was a good change to a roast. Maybe pick a country/cuisine each week to mix it up a bit

@lexloofah That's a really good idea. I might do that. DD is a really adventurous eater but DS less so but I would be very happy to find some new meals to add in

I make this a lot although I sub in any veg that needs using up rather than using the broccoli the recipe calls for (carrots, courgettes & peppers all work). I don't put the lemon in either and I've started to just chop the garlic as I got fed up with trying to find the whole cloves to pop them out of their skin! I serve it with home made garlic and oregano focaccia.

I've had no kitchen for three weeks so I have meal planned this week with a vengeance.

This is our menu this week. I'm really enjoying cooking and people on here are always willing to help and share recipes

Monday - chicken, chorizo with red wine made in the slow cooker

Tuesday - shepherds pie with loads of veg (onion peas carrot and swede)

Wednesday- couscous with prawns,
The rest of the chicken and the rest of the chorizo, peppers, feta, tomatoes and cucumber

Thursday - spaghetti Bolognese

Friday - Gordon Ramsay chicken tikka masala

Saturday - quorn chilli

Sunday - pasta with cheese sauce with bacon and m and s posh dog sausage sliced up.

We have, and not really only on a Sunday but we mostly cook from scratch on a daily basis;
Hunters chicken with either chunky wedges or new potatoes and salad
Shepherd's pie (we had that last night)
A big pot of stew (brill on can't be bothered days as you can chuck it all in a slow cooker or a oven proof dish and it does itself)
A crusty pie like steak and onion or chicken and mushroom
Tagliatelle with mushroom and ham
Lasagne.

Sorry not an answer but whenever I say in real life that we stop roasts to enjoy Christmas dinner more, people are always a bit Hmm

A Mediterranean feast, ciabatta bread, different salads, roasted peppers, different dips, chicken, prawns, a pizza to share, basically what ever you want. My children love it, they help themselves I just put in all in the middle of 5he table,

Steak and kidney pie, with potato and parsnip or fennel gratin.

Moussaka made with lamb.

Coq au vin.

Boiled gammon joint with colcannon.

Poached chicken with egg sauce served with rice.

If you want to make Sunday dinner a special meal during lockdown, it's always fun to have sharing meals like tapas, mezze etc. It also means you can have some more adventurous dishes alongside more simple dishes for your DS.

It's kind of comfort food weather at the moment, how about:

Boeuf Bourguignon with Gratin Dauphinois
Goulash
Pork fillet wrapped in pancetta (or bacon) with roast apple slices and garlic mash or butter beans
Cassoulet
Portuguese arroz de pato (duck rice) with chorizo
If that is too adventurous for your DS, I sometimes make it with chicken and bacon pieces instead. I also top it with crispy onions or breadcrumbs toasted in garlic butter for a bit of crunch.
