Leek and potato soup

Has anybody got a really good recipe for leek and potato soup? I'm always vaguely dispponted when I make it - everyone else's seems so uch nicer than mine!

all i do is sautee finely chopped leeks in butter and olive oil, add cubed potato, cover with boiling water, and simmer, adding marigold chicken bouillon powder to taste... and that is it !

I do similR TO what lulumama does but I used igger chunks of potato. I also stir in more butter right at the end (arteries, I know.....). I just use a tesco own make stock cube in 450ml of water

You can also use half milk, half water to make a creamier soup.

My recipe is half milk, half stock. Then stir in some creme fraiche at the end!

Same as Lulumama, but use Vecon to make the stock (from health food stores).

I do this.

Finley slice leeks, potatos, and saute in butter for a few mins add chicken or vegtable stock and leave untill tender then add cream to thinken add lots of pepper and some salt and blitz - yummy!

I freeze some aswell, its easy to quickly re heat when in a rush.

I love making and eating soups! i have a freezer compartment fully of various flavours!

Taste delicious especially with some freshly made thick crusty bread! The kids lap it up

STOP PRESS - my brother has just told me what I've been doing wrong. Apparently you mustn't put it in a food processor because it turns the potato to glue. I didn't process this last batch, just bashed it with a potato masher a bit. Or does everyone know this but me?

Popsycal's extra butter is a good tip! Very delicious!

I saute 2 onions, then add as many leeks as I can find, cubed potato (I don't bother peeling them), sweat in butter for about 20-30mins. Then I add milk and chicken stock and simmer for further 30mins, blitz it add plenty of black pepper and fresh parsley.

Before I serve it I stir some leftover cream or creme fraiche in, but only if I have any - soup is a 'leftover' meal so usually whatever's left in the veg compartment of the fridge gets hurled in too!

If ever you make a soup which just doesn't hit the mark taste wise then add some tinned toms or tomato puree - works a treat

I use a hand blender and mine never goes like glue! Possibly using the wrong type of potatoes?

key is in the order of the words its leek and potato soup not potato and leek soup. Need a large leek per person (just use the white bits and keep the green bits for making stock). Sweat chopped leeks for 30 mins+ until sweet and soft, then add chopped potato (one largish one will do for four people). Fry for a few mins and then cover with stock. Bring to the boil and simmer unti pots are cooked. Add milk,cream and seasoning to taste. Put in blender (for lumpy soup just blend half). Just before serving bring up to temp

Just checked with brother - he says blender= fine - food processor =instant wallpaper paste. He also seconds the more leek less potato recipe.

This is what i do, its a recipie i have tweaked and re written over time.

1 tbsp vegetable oil/butter
1 onion, sliced
1lb carrots, sliced
1 tsp ground coriander
2 pints vegetable/chicken stock
reasonable sized bunch fresh coriander, chopped
salt and pepper

Soften carrotts and onion in butter/oil for about 5 mins.

Stir in the ground coriander and season

Add stock and bring to the boil. Simmer until the vegetables are soft.

Whizz with a hand blender or in a blender until smooth. Reheat in a pan, stir in the fresh coriander and serve.

You can add cream/milk but as i am always on a diet i don't bother!

I have several recipe books i have made with recipies i have created and copied then tweaked. one of them is all soups!

key is with carrot and coriander soup is to cook the carrots completely in the butter/oil before adding in the stock. Sweating them brings out their flavour much more than if they were boiled.
