what to do with left over mashed potatoes?

Hi, i cooked more mushed potatoes then we could have. What would you do with the rest of them? please, could you post some tried and tested recipes? Ta.

Fish cakes? Mix potato with a tin of tuna and some spring onions, form into cakes, dip into seasoned flour and shallow fry gently till golden on each side

open some tinned fish ,mix together ,coat in breadcrumbs . Hey presto homemade fish cakes for tomorrows tea

Or hash browns - shape with soem chopped onion and fry.

Mix it up with some chopped onion and tuna
Bind with a beaten egg
Mould the mixture into burger shapes
Fry until golden in sunflower oil

Mix with cheese and onion, put in a dish and top with more cheese.

Could also add leeks, cabbage, any veg really.

add some wholegrain mustard and lots of very mature cheddar , bung in microwave, stir it up goooood and then sit on sofa, watch telly and eat along with long tall ice cold glass of lemonade

Use it as a thickener in home made veg soup.

Make bubble and squeak with cooked cabbage and onion.

Fry it in butter with tuna, cheese and chillies.

we love potato cakes, add some flour and a little bit of milk to your mash,so it becomes stiff and 'doughy', mix well, then either roll it out on to a floury worktop (with a good bit more flour sprinkled on top) and cut out with large-ish pastry cutters or roll into balls in very floury hands; put on a baking tray and into the oven for about 15/20 mins. serve with butter, cheese or marg melting on top. yummmm

That would actually be perfect for my kids as they don't like tuna (shame but what can I do). I'll trypotate cakes tomorrow. Hopefully my kids will like them. Thank you.

be prepared to spend the rest of the week peeling and boiling spuds. my DC ages 6,4, 21mo adore them and can't get enough.

i don't, but haven't looked in recipe book for them (ever. hmmm) just something my mum used to make a lot. Guess what we had with our sausages for tea today -it's all your fault... and i haven't even got the excuse of too many ready-mashed potatoes. Enjoy!

just make some gravy, pour it over the amsh and eat it.

(there is never any left over mash in the house of LTH)

Add finely chopped onion and grated cheese, roll in egg first then breadcrumbs, fry and eat with baked beans.

If DH is not around then i fry until crispy on the outside, then fry and egg (yolk still soft) then make a sandwich and enjoy (my guilty sandwich ).

If dh is around the bubble and squeak, or use to make a potato pastry for a meat pie type thing.

if it was me I would butter 2 pieces of bread and put all the lovely mash potato in between the 2 bits and scoff it before anyone saw me.

But i think you should make bubble n sqeak and serve it with bacon and a fried egg.

Great ideas, thank you. Unfortunately after I grated some cheese, add some milk and some flour and made them into potato cakes both my kids didn't even look at them. I had some but most of it was wasted! it wasn't my lucky day.

My children LOVE volcanos for breakfast. Make it into pyramids about 2 inches high. Rough up the surface with a fork, make a crater in the top, brush with olive oil and put in a hot oven for 10/15 minutes until lovelyu and brown and crispy. Fill craters with ketchup and serve.

Remember, they are called volcanos.This is copyright - you are not allowed to change the name without paying me mega bucks. And be aware that if you have a boy child (don't like being sexist, but this is real life) you will spend breakfast answering questiona about lava, eruptions and Pompeii. Be warned!
