what to do with left over mashed potatoes?

Hi, i cooked more mushed potatoes then we could have. What would you do with the rest of them? please, could you post some tried and tested recipes? Ta.

came back for another nosey at the thread. Shame your DS's weren't potato cake converts. I love the volcano one as well, conversations about lava pompeii etc are on the menu anyway so might as well fuel their imaginations at the same time as their tums.
Pardon my ignorance but what do u serve soda bread with? Recipe looks interesting, good for kids to join in with too (the bit about 'be rough with it' made me think.... yes 2 boys as well) - suggestions please?

used to make bubble and squeak, or if not cabbage, just onions,
but now, strewth, never any mash left!

Volcanoes sound amazing

I make fish pie.

White fish
smoked fish - both cooked in milk

Onions, peppers, (fried), peas and sweetcorn and carrots

Make white sauce from fishy milk, (very thick) mix with fish adn veg

Top with mashed potato, grated cheese adn breadcurmbs. Bake in oven. YUM.

Also love potato scones.

But due to my love os mashed spuds, we rarely have anything left

hi fedda i freeze left over bolognaise in individual dishes and when i have left over mash i put it on top of the frozen bolognaise.
You always have cottage pies in times of emergencys.
Just grate cheese on top before putting in oven or microwave (optional).

Wish I had left over mash. Just doesn't happen in my house.
If I ever did have it, I would use it for bubble and squeak!

Make croquettes. Add a little seasoning such as parsley, salt and pepper and then roll in dry bread crumbs and deep fry till they are a nice golden colour.

Ooooo, I love the sound of that. Next time i'll try it for my kids. I can't do it for myself though as i'm trying to get rid of my terribly big tummy.

I always make extra and freeze it in single portions. As long as you heat it up really well, it won't be watery. So very handy!

Saying that, I'm off to make fishcakes right now with some tinned salmon, beaten egg and parmesan, coated in matzo meal a la Nigella.
