Veg recipes that aren't 'sloppy'!

Hi all, DH has decided he's gone right of meat and I'm ambivalent, happy to go (mostly) vegetarian, but not vegan as love eggs, dairy etc. I'm just stumped for recipes, I made veg chilli the other night and while he ate it he wasn't mad keen as doesn't really like 'sloppy stuff'! Can anyone share any vegetarian recipes which are tasty but not overly sauce based? Thanks in advance!!

I should add, he doesn't like pasta !!! (Worse than a toddler, what's not to like about pasta??) Confused

Slow roasted butternut squash chunk with blue cheese, pecans and rocket as a salad. Stick some green lentils in there if you want to bulk it out. Any dressing works well with it.

Tacos with roast celariac strips or cubes, chipotle creme fraiche, salsa and guac is lovely.

Roasted chickpeas and broccoli tossed in spices and oil make a really good base for wraps, or as a salad, or to serve with veggie ‘meat’.

The green roasting tin is a great book for stuff like this. Half is vegetarian and half is vegan. There's a miso aubergine in there that is amazing. Does he like tofu?

I'm not veggie, but trying to cut out some meat. In the hotter weather, I'll sometimes do a few salads. Not just lettuce/tomato, but from a variety of things with cheese and/or nuts/beans etc in.

  • Watermelon, green beans, toasted pinenuts and grilled halloumi salad (I chop everything into 1cm cubes so I get a bit of everything in 1 mouthful, but can make the pieces any size you like)
  • Celery, date, parmesan salad. Only found this recently, and works equally well with raisins. I was sceptical, but it was really nice.
  • Mango, macadamia, avocado salad
  • Home-made coleslaw with nuts
  • Thai som tam (green papaya salad) or Thai green mango salad
  • Summer rolls. many tutorials on youtube on how to wrap. Rather than have the ingredients in separate plates, I just mix them together to make the assembly quicker. I usually just add vermicelli noodles, grated carrot, cucumber, mint, coriander and spring onions. They are actually vegan and gluten free too. I serve with a satay sauce made from peanut butter, soy sauce, sesame oil and sweet chilli sauce shaken in a jar to mix it up.
  • Baked potatoes with a variety of toppings- coleslaw, mayonnaise/corn, blue cheese, veggie mince.

You can't beat a home made quiche, I like roasted squash or pumpkin, with some sage fried off in butter and feta as a filling.

Roll the pastry out, blind bake, making sure the base is properly dry. Fill with softened onions and then layer your filling. Add the egg and cream mixture and bake.

  • Fig, spinach, pinenut, spring onions, balsamic glaze salad
  • roast pumpkin, pinenut, goats cheese or feta, spinach, balsamic glaze salad

Wow thanks everyone, some great ideas here, think I'll tackle a quiche later & stock up on baking potatoes!! Some of the ingredients mentioned we haven't tried (tofu) so will make a shopping list too!

Linda McCarteny burgers are very good in a bun with salad and fried onion, and some sweet potato wedges.

Went for a roasted veg quiche last night - bit of a faff pre roasting the veg, baking case blind etc but omg it was gorgeous & big hit with DH & DS (& me!!)

We have been having roasted cauliflower served with my version of a pilaf that has been going down really well. I season the cauliflower with salt and cumin when roasting and it comes out amazingly well.

Mixed roasted veg, including whole cloves of garlic and some tomatoes, go brilliantly with couscous and goats or feta cheese.

Stuffed butternut is good - I usually do some combination of spinach and feta. Ditto stuff mushrooms or peppers.

Salads aren't sloppy!

Also, in nicest way, if DH doesn't like what you make - he needs to take a few turns in the kitchen! Wink

I haven't made quiche in a while, but I used to cheat and buy the pre-baked pastry cases. So much easier and still delicious.

Got some falafels in Lidl - really lovely in a wrap with salad & hummus!! DH is really rubbish cook but amazing handyman & cleaner so I really don't mind!!

Get some veg recipe books. I like Hugh Fernly Whatshisface called Much More Veg. And a book called The Green Roasting Dish. And Plenty by Ottolenghi.

I'm making a delicious Dahl thing from it tonight with some cod (DP is veggie so will just have a huge portion of the Dahl and I'll have a smaller one with the fish). We use this book a lot.

We also cook a lot of curries, though I know you said not too sauce heavy.

Roast dinners with nut roast.

Veggie sushi.

Recently discovered the joy of a baked whole aubergine. Also good on the BBQ.

Veggie sausage and mash.

Fake bacon rolls.

But yes, recipe books are your friend!!

Not for everyone but consider quorn and soya products "fake meat" too. Some don't like/it doesn't suit them but some like me really enjoy them. Even though I never really liked meat.

Doesn't always have to be wholesome "from scratch" type meals either:

Sausage and mash with veggie sausages

Pie and chips

There are loads of veggie grills/crisp bakes/fingers type things you can have with chips/mash and veg

Roast just use quorn fillet or steak instead of the meat.

How "sloppy" does he not like? Because there are many sauce involved dishes that aren't overly sloppy

Risotto
Curries
Pizza
Pasties/pies/slices
Stuffed veggies even gratin style
Savoury pancakes
Buddha bowls (my dd isn't veggie but loves these)

Wtf with the pasta? I love pasta it's fairly neutral.
