Veg recipes that aren't 'sloppy'!

Hi all, DH has decided he's gone right of meat and I'm ambivalent, happy to go (mostly) vegetarian, but not vegan as love eggs, dairy etc. I'm just stumped for recipes, I made veg chilli the other night and while he ate it he wasn't mad keen as doesn't really like 'sloppy stuff'! Can anyone share any vegetarian recipes which are tasty but not overly sauce based? Thanks in advance!!

Have a look at burrito bowls, Buddha bowls etc. Very tasty and filling without being too heavy in the summer months.

Vegetable stacks such as aubergine, courgette, tomato & mozzarella with pesto.

Veggie tray bakes such as roasted veg and halloumi - can be served in wraps, with rice or as a side dish.

^ Btw when I’m roasting veg I do extra to be used in quiches, frittatas and omelettes or added to couscous or salads. The veg will be fine in the fridge for a couple of days and it saves you loads of time.

Burgers - spicy bean, mushroom & halloumi, falafel.

Dry curries and stir fries where the small amount of oil plus the spices coat the ingredients without it becoming a “wet” dish.

My feelings exactly.

Lived on the bloody stuff along with white bread and marg when I was on job seekers allowance and now only eat it when there is nothing else.

I never bother baking blind for a quiche. Prick the pastry case, brush with a bit of warmed olive oil then full and then cook on a preheated baking tray. Lovely crispy pastry every time.

Dry curries like aloo gobhi or matter paneer, or mushrooms and onions fried in spices and a couple of chopped fresh tomatoes, then just a spoonful of yoghurt. Can put chickpeas in to bulk it out too.

Pad Thai, with a mix of peanut butter, lime juice and chilli sauce to coat noodles and stir fried vege.

Pastries quiches made with cottage cheese, roasted vegetables with some kind of protein.
