Easy, semi healthy Saturday night sofa tea

Looking for some ideas for tea tonight, it needs to be be fairly quick, healthy would be an advantage. Usual Saturday night are sometimes a takeaway or burgers, steak sandwiches etc.

Tacos - lots of shredded lettuce, tomato, avocado, onions, corn, sour cream or yoghurt etc. Make extra so that you can have it in an omelette for lunch next day.

Fajitas!! Steak / prawn / quorn / veg if you don't want chicken.

One pan to fry all the stuff with a packet mix or make your own if you're feeelinf fancy.

Then shove it all on the table for people to assemble themselves

Yes true, however we own our own business and he works 6 days a week and has done for the last 40 years so I cut him a bit of slack.

I’d stick out a buffet - couple of cheeses, fresh bread, charcuterie, dips and crudités, some potato salad, olives, bruschetta etc.

Maybe stick on one of those snack selections or party selections if someone wants some hot food.

This is my go to a couple of times a month.

Wrap pizzas - get everyone to do the work and add their own toppings!

Pesto pasta - cook pasta add pesto, cherry tomatoes cut in half and cooked chicken (I used packet stuff to cut down on the time) stir on the heat til all warmed through

Or nachos? Make up a quick chilli and then layer it with tortilla chips and cheese in an ovenproof dish. When the cheese has melted, top it with salsa, sour cream and guacamole, with jalapeños, shredded lettuce and tomatoes.

I think macaroni cheese is perfect for this, especially if you are eating on the sofa. I sometimes make it with bought cheese sauce and ready grated cheese if I truly can't be arsed. In fact I might do that today.

Also if you are going to the shops you can get big ready made lasagnes which are good for a night off from cooking.

My kids favourite is Tandoori Takeaway (chicken) from the Fay Ripley cook book - I'm sure you can google it.

So so simple (only about 4/5 ingredients) and tastes amazing but you do need to marinate it for a few hrs or overnight.

We have it with rices mixed with peas and mint, some sort of flatbread or naan and popadums.

Easy fish pie
Coarsely grate a carrot and two celery sticks into a pie dish. Coarsely grate in 150g cheddar. Add a packet of fish pie mix (You know the bite sized fish chunks mixed) and some prawns. You can add some lemon zest and juice if you have it/some parsley/some chilli but not essential. You can also add some spinach, chopped up tomatoes, tablespoon of creme fraiche. It’s very forgiving. So add what you want, or nothing, then turn it all together with your hands and season. Cook two packets of microwave mash and spread them on top. 40 minutes in the oven at 180. Only thing to wash up is a box grater and the pie dish.

It’s a Jamie Oliver one. Never fails and
totally delicious.

Roast chicken with a pre-prepared salad, oven chips & garlic bread.

Or if you don’t want to mess around with playing up fajitas do the enchiladas instead - all in the oven so come out at once.

Thanks Everyone, decided on tandoori, been to shop chicken marinating in fridge, bought some coconut rice which I will mix with kidney beans and some spicy naan.

I actually re made it on Monday because I’d remembered it for this thread! Delicious and kids ate every scrap. Made the mash from scratch though because I am supermum obvs.
