What should I make?! I have most store cupboard stuff but not much else fresh bar milk and some butter. Do have some cocoa

You don’t have to bake with them.

Making something like Shakshuka (2 eggs per person) for lunch will use several up. As would having scrambled eggs on toast for breakfast. Or an omelette.

If you have lemons and butter, you can make lemon curd pavlova as it uses both the whites and the yolks.

If you have frozen fruit that’s sharp, eg raspberries, blackcurrants or redcurrants, you could do a fruit curd instead of lemon curd.

Egg mayo. I use at least 10 eggs to make it for the four of us to make sarnies and there's not usually much leftover.

I want egg mayo now...

I would test how fresh your eggs actually are. Pop them in a bowl of water, freshest sink to the bottom, older eggs bob a bit and going off ones sit on the top! You'll find within a box there's often a few days difference in 'freshness'.
If they all sink they're all good for at least another fortnight.

Not sure if you know or not, but eggs often keep way past their use by date. Just need to do the sink/float test. Maybe they don't need using up after all Smile

A frittata! Or Spanish omelette. You just need whatever ends of veg you have kicking around, or you could throw in some meat or fish.

Really Lllot5 Can get them in all supermarkets around here now but they are limited to 1 box per customer and often it’s the organic pricey ones only they have. It’s flour here you can’t get for love or money

Baked egg custard, you don't need to make a pastry case, just bake it in a dish, or individual dishes.

Hard boiled, the eggs will keep for several days, and good for lunches or added to a fish pie.
