Fresh ginger, what else can I do with it?

I bought it to make the lovely chicken noodle soup we had for tea (DD asked if it was Pot Noodle!!Confused ) but I have a good handful of fresh ginger that needs to be used up. Any cake or biscuit suggestions?

Freeze it and just grate what you need from the frozen ginger.

It can be frozen, and then small.anounts grated off when you need them, so no need to use it all up in one go

Go back in time a few days and give it to me. I was making korma and supermarket was all out. Had to use dried.

Anyway make gingerbread men.

I freeze and grate rather than grate and freeze, not sure which is best though!

Don’t freeze it! Made that mistake and it was so bloody painful to hold when I grated it. Never again.

Grate it into a lovely marinade: three parts olive oil, one part soy sauce, crushed garlic, one teaspoon sugar, lots of grated ginger. Works for tuna steaks really well,but other meats too. Fry in the marinade and the ginger and garlic will caramelize. Serve with avocado and basil and tomato salad. Yum!

I never peel ginger when using it fresh or frozen, way too much faff, the skin is so thin that imo you don’t need to bother.

Cut into chunks, or leave whole and grate as needed.

I couldn't buy fresh ginger and garlic on my last pre lockdown shop, so bought a jar of each. I am now converted, works out a lot cheaper as I use a lot of both and is so much more convenient. I would use fresh ginger for ginger and lemon tea though, nothing beats it for that.

I like it best in a stir fry.

It freezes well, as others have said.

You can break it into lumps and plant it in a pot of soil and it will grow new lumps if you look after it.

It goes very well with honey and lemon and perhaps a splosh of hard booze if you're a bit under the weather.
