Fresh ginger, what else can I do with it?

I bought it to make the lovely chicken noodle soup we had for tea (DD asked if it was Pot Noodle!!Confused ) but I have a good handful of fresh ginger that needs to be used up. Any cake or biscuit suggestions?

Spiced apple cake, spiced banana cake, spiced carrot cake.

Or you could keep it and use for curries and other Asian dishes.

I do a marinade for tuna very like that one above but I use equal amounts of soy sauce and sesame oil, juice of a lime, garlic, ginger and a little chilli.

I’m not sure but I think you freeze it and grate it.

Japanese style eggplant.

Buy eggplant, cut into slices and bake it in oil. Whilst you bake it, add some shredded ginger. After baking the eggplant (it should be a bit brown but not too much) remove it from the pan and put it on some kitchen paper for a minute or so to remove the excess oil. Then put on a plate and put some more grated ginger on it. Pour a little soy sauce over it as well. We eat it with rice and pork with garlic.

Slice it julienne, put in a jam jar, cover with lime / lemon juice, add a little salt to taste. (Slit some chillies into it if you like it hot). Close the lid and keep it on a sunny windowsill for a day.

Makes a lovely pickle that will keep in the fridge for upto 10 days.

I made a fresh carrot, and ginger juice today with a quarter of a whole lemon.

I LOVE ginger I use it ground in hot drinks too. It's great for the stomach , good against viruses !!

I make the best gingerbread with molasses. you can use both fresh and ground in it !!! Ginger beer is fabulous too. It's a bit of a faff to make though especially as I'm low sugar.

@pinkrocker OK - this it is totally weird but it works. A friend saw this on a TV chat show abroad recently.

If you have a throbbing pain on one side of your head or face, cut a slice of fresh, raw ginger and press it right on to the point of the pain. Eg your temple, forehead or side of nose (my usual places for stabbing pain). (I also get that pain in my eye, but of course I can't put ginger in there!)

You want to get the juices onto your skin so I just hold the pieces against my skin for a few minutes until the pain goes down.

It really does take down the intensity of the pain! It doesn't remove headache completely - and it doesn't last forever - but it helps it be more bearable.

I have sensitive skin and was afraid of allergic reactions to the ginger but I haven't had any irritation. Makes your skin go a bit red but it's fine after.

I was totally sceptical about it when I heard, but it really does do something. All I can think is that ginger is known to be an anti-inflammatory, so perhaps it's taking the inflammation down in a more topical way.

Freeze first, grate later, as and when you need it, with a teatowel round it if your hand gets cold.

BBC good food website has a fantastic recipe for a gingerbread with fresh ginger and dates here. It's delicious and keeps for ages plus freezes well.

Grated and mixed into grated carrot, bit of lemon juice, oil, parsley or coriander: nice carrot salad.

Put into a treyaki marinade for salmon or tofu.

We have a jug of fresh lemon, ginger and cinnamon (stick) on the go all the time. At the first hint of a sniffle or sore throat we drink a glass. No colds can survive it.

If you purée it you can then freeze it in an ice cube tray (I think one cube will roughly equal a tablespoon) Then chuck straight into your recipe. Save you trying to grate from frozen and measure out.

Or if you’re really lazy like me buy the ready frozen cubes of ginger, garlic and green chilli from the Indian grocers and use them 😉

Spring onion, red pepper, mushroom, garlic and fresh ginger. Fry up. Add coconut milk, a splash of fish sauce, soy and some king prawns and fresh noodles. Cook well and add a sprinkle of chopped coriander
