What to you put in cous cous?

I'm making a nice dinner next weekend with stuff like lamb koftas, feta, flatbreads and so on. I also have some cous cous (the plain stuff, not the flavoured packet ones).
I know to cook it in stock but what else can I add to it to jazz it up a bit? Thanks.

Use a stick cube in the water when you soak it, then mix finely chopped veg in with it. Whatever you fancy such as onion, cucumber, tomato, maybe some herbs. Then finish it off with a dash of olive oil and some lemon juice.

I add some flaked almonds and butter quite often. Or if I'm doing it as a salad add chickpeas and radish and herbs/spices

Tomato purée, butter, garlic, chopped up mixed peppers etc. Olives...?

We often use the roast veg packet mix ones to stuff red peppers with and then bake in the oven with cheese on top. Delicious.

To go with a Greek/Turkish type theme I'd say treat it as if you were making tabbouleh and add parsley, mint, chopped fresh tomatoes, seasoning and lemon juice.

When I make a tagine I make the cous cous with chicken stock, the I add chopped apricots and chopped pistachios, and a bit of chopped coriander if I have some. I always think pomegranate would be nice but I never think to buy one.

I put chopped red onion, corriander, feta cheese, big squeeze of lemon in. Sometimes chickpeas or diced cucumber. Pomegranate or bits of fresh orange are nice and fruity as well. Anything goes really! Chop everything small like jewelled cous cous.

Tabuleh is couscous mixed with pretty much equal volume of chopped fresh herbs. Parsley and mint I think. Plus seasoning. I hate it but it’s quite a traditional Middle Eastern way of serving it.

My mum make couscous with chopped noodles, Toasted pine nuts fried onions and garlic. Not sure why the noodles are there but they’re nice! sometimes Toasted flaked almonds and sultanas or chopped dates or dried apricots. Pomegranate seeds too are nice. basically anything vaguely Middle Eastern chopped up.

I add halved cherry tomatoes, garlic, pepper and spring onions softened in the stock before adding the cous cous.

Red onion, cherry tomato and sweetcorn, with a creamy Pizza Express dressing (or any salad dressing) has been a staple lunch for me for years.

I put red onion, yellow pepper, halved cherry tomatoes, cucumber, mint, flat leaf parsley, pomegranate seeds and Feta cheese in mine.

Vegetables roasted with a few chopped dried apricots. The sweetness and texture is amazing when stirred into couscous. Add some roasted nuts (pine, almonds, pistachios) for more texture.

I add sweetcorn, kidney beans, red pepper, cumin and paprika for Mexican style cous cous.

Or a tin of chopped tomatoes stirred in with whatever herbs I have available and finely chopped vegetables.

I'd do a variation on tabbouleh too. Lots of mint, parsley, spring onions, diced cucumber, cherry tomatoes, lots of seasoning. Maybe even some feta.

Or, for ease, just a load of gently roasted veg, including chickpeas.

Tend to use a chicken stock cube with the hot water. Some garlic n onion granules and chopped coriander

I like it cold so pop on tomato, cucumber, parsley, red/spring onion with a little vinegar eye dressing.

I put chickpeas, red onion, grated carrot, coriander, sweetcorn, feta and sesame seeds with a dash of lemon or lime juice in mine when I make it with chicken - delicious!

Oh now that sounds nice! I’d put in saffron for colour (ground up and infused in a little hot water) rather than turmeric.

I'm planning to make this soon and will be adding some sun dried tomatoes ( out of a jar), olives, cucumber red onion and lots of herbs eg parsley and mint.
