I'd like to make Nigella's chicken nuggets, but can't get hold of buttermilk

So what can I use instead? I really want to make a huge batch so that I can freeze some. I usually just do the flour-egg-breadcrumb thing, but I love the sound of hers. Would yogurt mixed with milk work? Could I freeze that uncooked?

You could make enid's instead, I don't think they use buttermilk (but I could be wrong), search on enid and nuggets and you'll find them.

Sorry don't know about replacements. but I saw buttermilk in Tesco's yesterday, next to the milk. Are you somewhere remote? (It was a v big Tesco's admittedly.)

I make Nigella's all the time - but I usually use yoghurt instead of buttermilk. They are delicious - and so it the tartare sauce-y thing she reccommends to go with them.

I always feel a bit poncy using buttermilk, I have to say. I get an unbearable urge to put a pashmina on and change dcs names to Anaminta and Tarquin

why is buttermilk so hard to get here? at home you can get great big cartons and here it is in crappy little plastic containers like it is some special gourmet product.

Because it is advocated by Nigella, it's easy to pretend that it is a rare gourmet product and sell it in a tiny carton for £15.99. Market forces.

actually its only about 70p but it annoys me cos i need to buy about 4 to do anything with it.

i am greatly amused by the idea that buttermilk is a poncey thing.

In her Buttermilk birthday cake recipe she gives an alternative of semi-skimmed mil plus some yoghurt. Can't remember the proportions though - think it was 175ml milk and 75ml yoghurt.

Interestingly I also use buttermilk to make scones, and I don't feel poncy when I do that. I think it's the juxtaposition of "chicken nuggets" and "buttermilk" that brings on a fit of the pashminas

I don't think you did cause upset did you? My children quite like being called Araminta and ~Tarquin - it makes a nice change!

You must do the Ritz cracker thing thought - even without the buttermilk - it is really delicious. And the aforementioned A and T really enjoy bashing them to crumbs!

Sheherazadethegoat - I think I have a recipe somewhere for making your own buttermilk -will look it out if you want. You could probably use one of the shop-bought cartons to get it started (I think it's a bit like making yoghurt iirc).

I am also amused about the tiny cartons you get here - I sometimes buy them meaning to make soda bread and then never get around to it....
