Can’t get dried milk for Panasonic bread maker.

Has anyone experimented with leaving it out or substituting fresh milk?
The French bread doesn’t require the milk powder but nearly every other type of dough appears to require it. I used to make pizza dough but that requires dried milk.

As we are all trying not to waste flour I would be grateful for any input on the subject.

I’m sure it’s an optional extra, to be honest. Not all loaves need milk — might be fun to experiment – can you post what happens?

I appreciate that you’re trying to not waste flower, however I’m sure the results will be fully edible and even delicious.

The instructions for the breadmaker use powdered milk but in my experience the bread is fine without it.

I've made pizza dough today with 7g fast action yeast, 500g flour, 250g water and a glug of oil.

If not, use fresh milk instead of water.

Never use any dried milk for any of the programmes, only flour, yeast water pinch of salt and a little vit c powder which helps give a crusty crust, the French bread comes out great like this

I have a Panasonic bread maker (SDD-255/SD-254) and most recipes in my manual actually don't require milk powder at all. Feel free to PM me if you'd like me to send you some recipes.

I never use it. Either a mix of water and milk, or water + 15 ml oil.

My basic bread recipe is: 500-1-1-2-3-300

500 g bread flour
1 sachet yeast
1 tsp salt
2 tsp sugar
3 tsp oil
300 ml water.

Works every time.

Then add other ingredients as you fancy.

Thank you, thank you, thank you. That is absolutely wonderful. Also the recipes and the manual from a Panasonic. That has solved a problem I didn’t need to have. I can now get going. Flowers

What I do is that if they ask for 1 cup of water and a tablespoon of dry milk I fill my measuring cup with water and some milk.
So the liquid still remains 1 cup but the milk adds softness to the bread

The more recent recipes for the Panasonic (I got a new machine a few years ago) make no mention of powdered milk.

I don't use powdered milk in the bread maker and the only recipe I use ordinary milk in is sweet currant buns - everything else I just use plain water

I have a Panasonic bread bakery too. I've never used milk powder with any of the recipes. I sometimes use a little fresh milk to make up the liquid quantity (say 50ml of the 300ml I use in my most usual loaf).

Powdered milk must be a new thing because I've got a fairly old Panasonic, I think it's an SD255 and the recipes only have normal milk, none of them have powdered milk.

I've had my machine for about 6 years now and the recipe book says use powdered milk but hey, I'm a rebel and don't use the bucket of salt and pint of oil they say I must use (or the bread will be poisoned).

I use a knob of butter and a glug of olive oil. No need for milk / milk powder.

Here is the update. As advised I left out the milk and got an A1 result. I looked at the Panasonic recipes in the new manual and they are the same as my old one for basic white etc but without the milk. There are some other interesting variations in the fruit loaf which should produce a richer type dough. Thank you again. Just hoping I can get some more bread flour to try even more ideas.
