Vegetarian Sunday ‘Roast’

We’ve decided to go veggie (not vegan) for January but have stumbled at the first hurdle - we always have a nice roast on New Year’s Day - but I can’t find a suitable replacement. Can anyone recommend a good recipe that is roast-like but no nuts or mushrooms as MIL doesn’t like nut texture and dc hate mushrooms. Everything I’ve found includes some form of nut or mushrooms - any suggestions?

Toad in the Hole with Cauldron sausages. Super easy to make and who doesn't love a bit of Yorkshire Pudding?

Quorn do a chicken roast which is good sliced in gravy , you can get veg wellington .. veg sausages in gravy .. loads of ideas in the supermarkets.

Nigella's ginger stuffed pumpkin is gorgeous, and would feel special for NYD.

I'd avoid meat replacements - they're never as good as the original and you don't want to start your veggie month thinking 'meh'.

You could do a tower of grilled halloumi, tomato and basil. Fresh, salty, goes well with veg and potatoes.

Quorn roast is good. Linda McCartney does a not-beef with a red wine onion glaze so looks nice flipped out to serve.

I love this for a ‘roast’. The sweetness of the shallots works super well with veggie gravy and the other roast accoutrements. Plus it freezes well so you can make a big one and have delicious leftovers for lunch.

That celeriac sounds good.

Must admit, I don't usually bother with a roast replacement - just have stuffing and then all the trimmings. Cauliflower cheese is lovely with roast potatoes etc, and I do roasted carrots, parsnips and shallots as well.

I was wondering about this too OP. Everything seems to be nuts, mushrooms or both!

I was thinking about a nice veggie pie actually. Or some kind of vegetable mix in filo would be lighter.

I tend to do something really easy as a veg main when I’m doing a roast. I put my effort into the sides and do a cauliflower cheese or a braised red cabbage , and then just whack a quorn roast or a pieminister pie in the oven. The joy of pieminister (other pies are available) Is that everyone has their own pie, so can choose meat or veggie. I haven’t had meat for 20+ years , so I like the taste of a quorn roast, but I can see how it might be a bit of a let down to people used to a proper roast chicken. If you want to make a main then a tarte tatin always goes down well with our household , and can be easily customised. I like shallot, mushroom
And cranberry.

We have various things for our Sunday roast - caramelised red onion and goats cheese tarts, vegetable strudel, lentil loaf, toad in the hole, halloumi and aubergine stacks

Veggie haggis is a good call. Annoyingly the brand I like, I can only find around B urns night in Sainsbury's. Waitrose stock one all year round but it's not as nice.

Macsweens veggie haggis gets my vote. Its amazing. I squish it into balls and bake them in the oven, with Linda McCartney sausages, and serve with toasties and veg, plus veg gravy. Yum.

The Linda McCartney not beef with wine/shallot glaze was our go to for DD19 for Christmas and it was lovely - since she is the only veggie there was 3/4 to use up, which we did with some gravy. Was really nice. Even DH - an avowed carnivore - enjoyed it.

Not meaty as such but on Christmas Day (mostly veggie family) we had a butternut squash and goats cheese galette and it was a complete hit.

These all sound amazing - we ended up with butternut squash quiche type pie from Tesco’s which was yum - I like the look of the lentil loaf recipes - will be trying those and veggie sausage toad-in-the-hole... lots of ideas!

Does it need to be roast? I love a good chilli (just all the veggies plus bulgar wheat to bulk it).

We just have a normal roast with no meat. The meat never did it for me - always the roasties and stuffing! People find it weird but I don’t really care. I’m not a fan of substituting with processed crap.
