Vegetarian Sunday ‘Roast’

We’ve decided to go veggie (not vegan) for January but have stumbled at the first hurdle - we always have a nice roast on New Year’s Day - but I can’t find a suitable replacement. Can anyone recommend a good recipe that is roast-like but no nuts or mushrooms as MIL doesn’t like nut texture and dc hate mushrooms. Everything I’ve found includes some form of nut or mushrooms - any suggestions?

We like a nice veggie pie.
Easy enough to do, chop up assortment of veggies (carrot, swede, squash, parsnip etc), and art cook by boiling for a couple of minutes. Fry leeks, onions, add a spoonful of flour, add milk, tarragon, season well, add part cooked veg.
Put in a pastry case and top with a pastry lid, so easy.
