Vegetarian cookbook recommendations

Can anyone recommend a good vegetarian cookbook? We are not vegetarian but keen to have more veggie meals. Preferably some reasonably simple recipes with easy to find ingredients.

Have you seen the river cottage veg book? Probably the kind of thing you’re looking for. Straight forward ideas that would appeal to meat eaters.

Two veggies and two omnivores in my household. The vegetarian cook books I use most are Hugh Fearnley-Whittingstall "River Cottage Veg everyday" and Cranks Fast Food (an older one, but recipes which should be doable in half an hour). Anna Jones is another discovery in the past couple of years - she features in the Food section of the weekend Guardian, or the books I have are "A Modern Way to Cook" and "A Modern Way to Eat". Her recipes are maybe a bit fancier and she likes using alternative sugars etc, though you can often sub with sugar or whatever honey etc you may have at home.

I also quite like BBC Good Food mag - don't just look at the vegetarian recipes, some of the meat ones you can leave out bacon, or use vegetarian sausages or Quorn etc in place of the meat. BBC Good Food website is good too, you can search by ingredient or look for veggie recipes, quick recipes, or indeed quick veggie recipes! I also got my daughter a student vegetarian cookbook, which has plenty of easy recipes with cheap and easy to get ingredients.

Not veggie but an amazing vegan cook book is 'thug kitchen'.
The swearing gets a bit tedious but the recipes are cheap, easy and delicious.

MOB Veggie is great. Generally recipes are designed to feed four for a tenner, and they are really tasty and mostly easy to follow too Smile

I second Jamie Oliver's Veg, and I also really like the Bosh! Book.

Easy Cheesy vegetarian is a good website too.

The most recent deliciously Ella book is great, and doesn’t have lots of silly ingredients like her first couple of books. The cauliflower daal is a recipe I have made over and over again, and there are lots of stews and curries you can batch cook.

Melissa Helmsley eat happy isn’t veggie, but I was given it, and have cooked loads of things from there, all take around 30 minutes or less, and she always gives substitutes so you can basically work with what you have in, I think it’s my favourite recipe book I’ve ever had.

Hugh Fearnley-whittingstall’s is next on my list - have had so many people recommend it to me, non-veggies included

I really recommend The Green Roasting Tin - all the recipes are done in one tin so are traybake style and simple but very delicious and lots of interesting ideas. We aren't vegetarian but now eat so many veggie/vegan meals because of this book as the dishes are so great. Her other books are also great - Rukmini Iyer is the author - check out her insta for a look at the sort of stuff she does :)

I use vegan Richa a lot for curry recipes. There’s a cookbook but most are online. Don’t be put off by it being vegan-they’re the best curries I’ve ever madez

I really like the Cranks Fast Food, also Leiths Vegetarian Bible. The BBC do a load of mini recipe books with 100 recipes and the veggie one of those is good if you want quick, easy and tasty.

Deliciously Ella has an app which costs 99p a month with some great recipes. I've made most of them and DH who is not veggie has really enjoyed them. Her cookbooks are great too but some of the ingredients she uses are quite expensive and obscure.

Other cookbooks I've liked are Ferne Cotton and Niomi Smarts (Eat Smart) books, Jamie Oliver's Veg is good too. Also, ready steady glow by Madeleine Shaw.

I saw The Green Roasting Tin for £7 in The Works today.

I find the BBC Good Food and Waitrose online recipes excellent.

Ainsley Harriot's food in minutes books are worth a look, although the recipes are often quite spicy.

I'm currently trying to find good low carb, vegetarian recipes - any recommendations?

Those of you who rate Jamie Oliver's veg book, can you tell me which recipes in particular you've enjoyed. I've made a couple of them and haven't been very impressed but maybe I've just chosen badly.

Another vote for Hugh F-W’s Veg Every Day.

And as a vegetarian of 30 years, the one I use the most is Delia’s Vegetarian Cookbook. Every recipe we’ve cooked from it has been delicious. It’s a bit old now so just swap Parmesan, etc for vegetarian alternatives.

Which recipes do you like from Leith's Vegetarian Bible I seem to remember making the Puy lentil pie and a Leek and Olive gratin but I haven't looked at it in years.

The 30 minute Vegetarian by Rose Elliott is very good .Well designed recipes (Some take a bit longer though TBH) Her Mushroom Risotto is popular here .She has lots of different twists on classics too
