Tray bake suggestions please (lunch box friendly)

Ds (age 7) has just started packed lunches and so far I've made flap jack and brownies (which turned out like chocolate cake)for his treat.

I'm about a 4/10 baker with all the gear (pretty stand mixer, pretty food mixer...) and no idea!

What are your go-to tray bake recipes please?

I make a carrot cake traybake using sunflower seeds instead of nuts. I developed the recipe for school trip packed lunches, as my boys' primary school was a nut-free school. If you're interested, I can let you have it

Can't go wrong with Mary Berry's lemon drizzle traybake. So delicous.

My DC like banana bread in their lunch as well, which isn't a traybake obviously, but easy and delicious.

Have you looked at the Protestant Traybakes thread in classics? Although possibly not lunchbox friendly, they all sound very delicious!

Not tray bakes but easy to make and keep well: You can make almond macaroons with sunflower seeds rather than almonds. They do turn out green though so add cocoa powder and make them chocolate flavoured if the colour would be off putting.

Also these spiced apricot cookies: 100g butter, 225g wholewheat flour, 2 tsp baking powder, 1.5tsp mixed spice, 75g light muscovado sugar, 100g dried, diced apricots, 1 egg beaten, 1 tbsp milk. Demarara sugar. Blitz butter, flour, baking powder, mixed spice and apricots in a food processor until it resembles fine breadcrumbs. Add in sugar, egg and milk and blitz. Drop spoonfuls onto a lined baking tray and flatten slightly with a dampened finger. Sprinkle lightly with some demarara sugar and bake at 180°C for 15 to 20 minutes.

These were rock buns gone wrong (or "developed" 😁) so they are soft and cookie like rather than crisp but keep well for a few days.

Also this gingerbread with dates is yummy and a traybake.

I make soupdragon’s flapjack recipe from on here with the condensed milk-they’re amazing and keep well for a week. (They taste exactly like the marks and Spencer’s ones out of the tubs) I also make a similar recipe for malteser tiffin as listed above and nigella’s lemon drizzle cake 😋
