Easy lunch ideas that aren't sandwiches

Hi

I'm starting to think that bread doesn't really agree with me, but I am stuck for ideas on what to eat for lunch. I need things that don't take lone, or I can't prepare the night before as I have a 6 week old baby and rarely get to eat my lunch without a background of crying!

Pasta dishes can be quick and easy and you can have leftovers! Or rice? If i'm hungry and short of time i have one of those 2 min micro rice sachets! Or soup!

oh yes please! What a great thread but expand to kids as well please. i'm desperate now that school's been out for over a month & we're sick to death of ham sandwiches.

I'd say something you can put in the microwave and three minutes later eat. Seriously I couldn't get myself out of bed in time for lunch when my baby was 6 weeks. You're a wonder.

Sushi is a fave in this house, or quiche and salad (we do both homemade but can easily buy ready made in shops). In the winter I make big pots of all kinds of soup and freeze into smaller portions.

I use to make a large pot of vegetable soup and keep it in the fridge to eat over several days (heated up in the microwave).

Frittata (sp) can be made the night before and eaten cold from the fridge.

oh yes, bumperlicious. if you have a child of 6 weeks then someone else should be cooking for you. soup or cold gazpacho in good weather is a great idea. or chickpea and chorizo stew, made in advance and heated in micro.

Wizzardy Woh chicken drumsticks - harry potter drumsticks for HP fans

Mix half a pint of greek yogurt with 2 tablespoons of redcurrent jelly, 1 tbs of wholegrain mustard, juice and rind of half a lemon and salt and pepper. Put in 6-8 chicken drumsticks and leave to marinade for at least half an hour.

Pop the chicken drumsticks in an oven dish bake on gas 5 for 45-50 mins.

I do a batch of these for pack lunches aswell and then pop them in sndwich bags ready to put in the pack lunch. I also but melon and chop it up (now have a baller) and put in individual pots ready to throw in the pack up box for school.

Then I make a batch of cous salad or rice salad to go with it. The rice salad I pop in kiwi, grapes or mandarines with a little oj and honey. My cous cous salad I put in sultanas and spple with apple juice and cheese.

I don't eat much bread so I always try to give my self a left over lunch from the night before... I've had a roast today sometimes it spagetti bol.. salads.. etc...

what others have said
would def hoover up all left overs from the night before, saves cooking twice
love cold food

brown rice with roasted veg/ fish/ soya sauce, fresh leaves to perk it up

and all pasta salads, potato salad, fresh veg salad, avocado, beetroot, etc..

crackers do yo like them? love em
make up mad toppings bit of everthing

Thanks for the ideas guys, they are all great. Aitch, my DH hates cooking but to be fair he does most of the house work at the moment and half the night feeds so I can just about manage the cooking!

I try and plan food for dinner the night before that keeps well, so me and DD can eat leftovers the next day: macaroni cheese, risotto, etc...

Quickest meals for making for lunch are: pasta pesto (could be wheat free pasta, and the type I've got seems to cook quicker than the normal stuff), scrambled eggs, rice cakes with peanut butter and cottage cheese (sounds horrible, tastes yummy), or a 'picnic lunch' of everything in the fridge: cold corn on the cob, mini snack sausages, chopped cheese, pre-stoned olives and crackers (I buy thing like this in advance so if I'm desperate there's always something useful).

DD loves frozen peas and corn straight from the freezer, which is always good to keep the wolf from the door while I make her 'real' lunch.

Humus (sp?) & oatcakes.
Rice cakes
Tinned mackeral/other fish (good for calcium if you are breast feeding)
Hot chocolate (ditto)
Handful of raisins and seeds
Tin of lentils with grated cheese on top - pop in the microwave for 1 minute
Hunk of cheese/tomato/cucumber
