Leftover leg of lamb ideas

I have about a third of the gigantic leg of lamb I bought for lunch left over and don’t know what to do with it. I don’t cook lamb very often, it seems a lot of faff trying to get it off the bone and I’m not so keen on it but had family over. I don’t have a pot big enough to boil it in so will attack it with a knife. What could I do with it?

Lamb salad with feta.

Lamb salad with halloumi.
Cover it in cumin or sumac and have it with couscous and salad.
Lamb saag (lamb & spinach curry)
Tagine
Some kind of middle eastern inspired lamb & chickpea dish.

Shred it, mix with runny honey, soy sauce and Chinese five spice (enough to just coat it lightly) and dry fry until dark and sticky. Serve with rice.

This is what I’m doing tomorrow, with leftover lamb from today.

Take the meat off the bone ASAP. Whatever you decide to do, do that now.
It shouldn't be a faff. The meat, if cooked correctly, should fall off the bone. Our bone always comes out easily and completely clean!!

I usually shred the meat and have it with pitta bread, humous, roasted peppers and salad. I actually prefer this to a roast dinner.

Christ that's a complicated Stovies recipe and includes celery! Fuck me, it'll be a cold day in hell before that touches my stovies....

OP essentially it's onions, left over red meat roast (or sausages or sometimes even a tin of corned beef) and potatoes cooked in meat stock (usually beef). Cooked just so that the potatoes are soft (and bite size) and there isn't gravy as such. I think it's like scouse if that's more familiar. Fry off your meat and onions, add in your potatoes cut into small ish chunks and then add stock to just reach the top of your mixture and no more, add seasoning and simmer away until potatoes are cooked through and you have the desired consistency.

I never add stock to stovies, or celery, but I do add onions
