Do I treat it like a suede? Chop it, boil then mash it?

No way!!! What a waste! My favourite of all root vegetables.
I have 2 favourite recipes:
Creamy truffle soup - that’s vegan and healthy
Sauté onions, garlic (and perhaps a bit of celery), add celeriac chopped up, vegetable stock, sometimes I might throw in a few spuds if I have some to use up.
Blend once cooked and add truffle oil and or shavings.
It’s super delicious!!
Remoulade - loads of easy recipes online. I grate mine using a electric blender and always mix the Mayo, lemon, Dijon mustard & salt first to get the taste right.

Peel and chop with potatoes and boil together then mash. Delicious with cold duck or posh sausages and salad.

Roast it.

I like it roasted. Peel, chop into chunks about 1", drizzle with oil, add herbs if you want (I usually use thyme), roast at 220 for 45 mins, turning once. Salt when it comes out if you like.

Love remoulade too but moreso in the summer. With smoked salmon or trout.

Will mash it I think.

I use it half and half with potato for a lighter mash.

It is lovely raw in home made coleslaw too.

I always have mine mashed, but I mash it in with some potato as well (and butter and a but of crushed garlic). Bloody love celeriac need to get one this week!

chop, boil in milk till soft, then blend with lots of pepper for a puree - I had it on my roast dinner yesterday - delicious!

Oooh lovely with fennel blended in soup that's a HFW recipe too. We had it with grated truffles yesterday it's the season here!
