25kg of potatoes.....recipes please!

My MIL has very kindly brought me a LOT of potatoes. I am an expert masher/roaster and so will of course be doing the obvious with them. Does anyone have any more creative ideas or recipes that call for a lot of potatoes?

Thanks!

mash without milk or butter and freeze.

dauphinoise
forestier
butter pie
Cornish pasty
hasselback
colcannon
leek and potato soup.
Lancashire hotpot
rosti
hash browns
chips
sauteed potatoes
fondant
pomme parisien

I don't think you have enough for all of these but if you use them quickly she might bring another sack!

Spanish omelette for light-ish lunches!

I mash with both butter and milk and freeze in portions then store in freezer bags.

I mash without milk or butter before freezing so that I can change my mind and add different things after defrosting: also prevents crystals in the mash.
I pack into ziplock bags and smooth flat for easy freezer sacking (approx. 1lb per large bag) then I can crack off what is required and the bag resealed. You need to bang it on a worktop to crack it though Smile

stacking not sacking.

In a paper sack in the garage they will keep for months so no need to rush to use them.

IHeartKingThistle · 25/10/2018 16:08

Homity pie!

HereForTheLineEyes · 25/10/2018 18:50

Oh really,BrookCreek? Mine are in a paper bag in my utility room, that's good to know.

Thanks everyone, I will definitely be trying these out and googling the ones I'm unfamiliar with.

they keep for weeks/months if kept in cold+dark+dry. No rush to consume.

lljkk · 25/10/2018 18:52

I guess we buy a new 25kg back every 6-8 weeks. I love spuds, though.

HereForTheLineEyes · 25/10/2018 19:08

Why don't they package the smaller bags of potatoes in paper too, I wonder? My usual 4kg bags would always start sprouting if I forgot about them.

whole programme on R4 just now about plastic packaging!
Farm shops sometimes have 5kg bags in paper.

anitagreen · 25/10/2018 22:00

Potato bake it's gorgeous

BrookCreek · 25/10/2018 22:03

I buy a 25k sack from the farm and they keep perfectly well. If I ever buy supermarket potatoes (or any other veg actually), I immediately empty them from plastic bag and store in a paper bag. Tesco's home delivery use brown paper bags for loose veg.

Get an old fashioned chip pan. Mmm

CatAndMice · 25/10/2018 22:06

Bombay potatoes!

7Days · 25/10/2018 22:06

They will keep for a good month, in a paper bag in the cool and dark though

Xiaoxiong · 25/10/2018 22:09

Janssen's Temptation! Perfect dinner with a green salad dressed with something very sharp.

Other one-pan potato dinners: pork chops Boulangere, Spanish tortilla, or potato gratin with smoked garlic and Comte (www.theguardian.com/lifeandstyle/2017/nov/19/nigel-slater-potatoes-recipes)

Bobcat14 · 25/10/2018 22:15

Tartiflette

Handbaghag · 25/10/2018 22:20

Bacon and potatoes layered in a casserole dish with chicken stock. Oven cook for a couple of hours. Simple and delicious winter comfort food

crimsonlake · 25/10/2018 22:31

Potatos bravas.

Olderbyaminute · 25/10/2018 23:02

I like to peel the potatoes then dice them to 1/2 inch cube size and place in a bowl and sprinkle with 1 tsp olive oil and salt and pepper and usually a seasoning-minced garlic or Lowery’s seasoning or paprika and place on a silicone baking mat on a baking tray for 30 minutes at 375 degrees Fahrenheit (I’m an American)
