Mayo in cake mixture?

Morning guys!

So I came across a recipe this morning off good old Facebook which said to replace eggs and butter which MAYO!

I've looked online and seen a recipe for a Chocolate Mayo Cake which has a lot of good reviews saying add more chocolate in but then there are a few reviews that it became crumbly and you could taste the Mayo.

I love baking buns and cakes so I'm very tempted to try this recipe but I hate Mayo so don't wanna bake it and be able to taste it 😩

Has anybody done this before and it has worked or have a recipe I could use?

@MsForestier it just had to be done. Especially with the good old standard cake mixture of SR flour, butter sugar and eggs.

I don't think I'll be licking the spoon of the Mayo mixture though 😳🤮

It's just dawned on me that with no raw eggs it is entirely safe to lick the wooden spoon and scrape all the mixture off the sides of the bowl.

Isn't mayo an emulsion of oil and raw egg yolk?

This thread has got me in the mood for baking. I'm just thinking of making a Christmas cake - but I'll skip the mayo!

@MsForestier I can't really do a Christmas Cake because my mum is a vegi so what we tend to do is a chocolate steamed pudding, in the shape of a Christmas cake.
And then put malteasers allllll around the outside, drizzle some chocolate over the top and then pick some fresh holly from outside so it looks like a Christmas Cake 😀

There is a ginger Christmas pudding in GoodHouskeeping mag this month. Their Christmas cake is spiced port and orange. I like a dark cake. I'm going to have to start baking soon.

I used to make puddings but the steaming element drives me mad. Anyway I looooove marzipan Grin

Correction - it's a gingerbread Christmas pudding. There is a caramel sauce recipe to go with it.

I have an American (USA) cakes cookery book and lots of the recipes use mayo.

I'm doing it now but the mixture is almost crumbly it isn't coming together but I don't know if it's meant to do this or not 😩😩

Sorry no! I bought the book as I wanted to use measuring cups for quantities rather than faffing around with scales. I only use regular recipes. I'm not an expert or fan of baking I'm afraid.

It should be almost a batter rather than a cake mixture texture

@MsHomeSlice I did afterwards 😂 but then it broke my electric whisk! The handles don't turn properly now!

I won't be doing this again 😂😂
