Mayo in cake mixture?

Morning guys!

So I came across a recipe this morning off good old Facebook which said to replace eggs and butter which MAYO!

I've looked online and seen a recipe for a Chocolate Mayo Cake which has a lot of good reviews saying add more chocolate in but then there are a few reviews that it became crumbly and you could taste the Mayo.

I love baking buns and cakes so I'm very tempted to try this recipe but I hate Mayo so don't wanna bake it and be able to taste it 😩

Has anybody done this before and it has worked or have a recipe I could use?

Sue Lawrence's is a brilliant baker and her Book of Baking is fab. The spine falls apart easily, that's my only gripe about the book.

I've tried this recipe from her book and you can't taste the mayo.

You're making me hungry Grin

@MsForestier my mum is doing the 3 peaks walk next Saturday so my job is to stay at home, look after the dogs and bake buns

Here you go OP

10oz self raising flour
8oz caster sugar
70oz full fat mayo
1.5 tbsp cocoa dissolved in 8 floz boiling water
Drop of vanilla essence

Mix everything together and cook at 180°c (160fan) for about an hour and 10 mins.

Lush.

Genuine question, why do you need baking powder when you're already using SR flour?

@MsForestier I know! Everyone keeps asking if I'm doing it.. I don't even walk up the steps in the office at work so no chance for me 😂😂😂😂

Yeah she said she wanted something to help everyone on the Monday when they're back at work haha

@VanillaSugary I use baking powder in my bun and cake recipes all the time when using SR flour.. just gives it that extra little rise 😀

@JannerBird quick question.. the recipe you gave me, is this for a cake?
As I'd be looking to do buns ideally - do you know roughly how many I'd get out of it?

I have trouble getting my cakes to rise (definition of a first world problem right there), so I will try putting a bit of baking powder in, the next time I make one - thanks for that @JustBeenNosey.

I remember making the chocolate mayonnaise cake in cookery class at Sixth form college - as far as I can remember it turned out just fine - though my mum was somewhat miffed at having to buy mayonnaise just for this - she hated the stuff, and we only had salad cream in the house - I doubt it would have worked as well with that! GrinCake

I usually put a heaped tea spoon and another one for good luck😂😂 and they seem to work.
Also I've noticed instead of just shutting the oven door and it making a bang, gently close it.
This has worked great the last few times I've done it as well haha.

I'm deffo gonna give this Chocolate Mayo cake a go though now

OP yes this is for a cake (I use an 8" cake tin). I have never made buns with this mixture so no idea how many you would get - sorry!

Is mayo cheaper than eggs and butter?

Okay, the Sue Lawrence recipe calls for 200g or 7 oz of mayo. Would think it's a typo above.

It's just dawned on me that with no raw eggs it is entirely safe to lick the wooden spoon and scrape all the mixture off the sides of the bowl. GrinCake

I've been doing this for over 40 years as my late grandmother taught me this trick as it makes cakes super moist. You don't have any taste and since mayo is oil & eggs all you are doing is adding a bit more to your cake recipes. Highly recommend trying it and I usually just add 1-2 heaping tablespoons to a mix that already has eggs & oil.
