I'm at my wits end. I can make everything apart from flapjack. I have tried every recipe I can find but it ALWAYS comes out the same way - stuck to the dish with a crispy top and crumbly bits underneath. Currently eating a bowl of flapjack crumbs from yet another failed attempt.

I follow the recipes to the letter. I have tried cooking for slightly longer or slightly less. I have tried adding extra oats or extra golden syrup. Nothing works!! If it makes a difference I'm using a stoneware dish to cook it in.

So give me something fool proof...?

Maybe try the recipe again but use a metal tin, grease very well and line the tin with greaseproof paper.

Really push it down in the dish, I've used a potato masher sometimes!

They cook quickly in the microwave, although they need a very long cooling time!

Mary Berry recipe. I line a metal tin with greaseproof paper, push mixture into tin firmly and let it cool completely in tin before removing as it will break up otherwise (I mark out portions about 10 mins after it has come out the oven but leave in tin).

The recipes that use condensed milk are best as it makes them stick together better.

How weird I've just made flapjackyself this morn.

100g butter
100g sugar
1tbsp golden syrup
50g oats
75g cornflakes.
50g flour either is fine.

All dry ingredients into bowl.
Melt butter and syrup together DO NOT OVER HEAT.
Pour into dry, mix well.
Tip onto metal baking tray covered in grease proof paper

Press into edges, as above I sometimes use a potato masher and bake in oven at 190deg for 15-20 mins
Leave in tray into cold, tip out and cut up

I always use a silicon tray, cool slightly in the tray before you turn it out.

I think the problem may be your stoneware dish; try it with a metal baking tin. (Nothing wrong with eating flapjack crumbs with a spoon though - obviously all the calorie have fallen out...)

This sugar free flapjack is really nice but I suspect the issue is the dish. Use a metal one and line it with greaseproof paper.

Works perfectly every time.

Hmmm perhaps I should just keep using the current recipes if all the calories have fallen out. Best tip so far!

Am going to try again and will work my way through the list. The stoneware dish only just occurred to me - will try a tin next time and with baking parchment.

It's weird because I'm sure I used to be able to make flapjack!!

Miranda Gardiner condensed milk FJ are divine and foolproof.
They taste like the squidgy M&S ones.

You need @soupdragon's recipe and it's here on Mumsnet. It contains condensed milk and gives deliciously soft, squidgy flapjacks every time. I'll look for it now.
