I've been given a load of fresh beetroot what shall I do with it?

Neighbour has an allotment and grows industrial quantities of veg. He's just given me a huge bag of beetroot. I've never really eaten it and certainly never cooked it.
I was put off it for life by a colleague who ate it at her desk every day and all I could smell was beetroot.
DH likes it though.
I won't be making a cake btw.

I would parboil, peel and then chop into quarters and then freeze. So I could bring a handful into roast veg dishes.

Roast it in wedges would be my fave option. Yum.

My mum used to boil them up and pickle them but that would be a faff. But tasty. Or maybe that’s a bit 1980s Grin

IncrediblySturdyPyjamas I do like a big mixed roast veg dish. Would they take hours without parboiling?

I’ve never parboiled before roasting. They take the same time as carrots/potatoes/parsnips.

I parboil to get the skins off easier. To peel them leaves the kitchen looking like a mass murder has occurred.

No need for parboiling. Roast on a high heat 220c for about 50 minutes. My favourite combo is salmon, roast beetroot and creamed horseradish. Waitrose recipe if you want to google for specifics.

Raw - grate it with carrot, add a vinaigrette or just add a handful to a salad

Boil it in chunks for 10-15 mins, make a balsamic vinaigrette, add giant couscous or quinoa, then mix up with feta, walnuts and mint. Lovely salad.

Yum! You can use them to make tasty veggie burgers with black beans or lentils, chop them up in a salad or make Borscht. I've been growing them in my garden for the first time this year so have been eating them a lot!

I have just made a few bottles of chutney with a beetroot from the garden - beetroot, apple and onion, sugar and vinegar plus a few spices. Didn't stink the house out and it looks so pretty and pink in the jar

I'd make a huge batch of beetroot chocolate brownies. It is the only way to eat beetroot.

You could also juice some with apples, carrots, oranges, would make a lovely drink.

Make barsczc or whatever its equivalent in any of the countries in Eastern Europe or Russia.

The Polish one is the most faff, but is de.li.cious. basically it's a matter of making beef stock, then add celery and onion, then add the beetroot in cubes and just let every boil. Then remove all the solid bits, sieve, add parsley and serve, preferably with salty toasted bread or something.

Other barsczc versions leave the bits in and are more hearty, but the Polish one has a more refined taste IMO.

Cook and dice the beetroot. Make a raspberry jelly and add dice. Leave to set. Delicious. WI recipe.

These beetroot falafel are delicious, a bit of effort but not to bad if you have a food processor and worth the effort.

I mix it with orange juice and segments with a drop of walnut oil as a salad. Keeps in fridge for a good week.

Borsht is a good idea, I make a lot of soup. I have a marrow sitting in the kitchen, perhaps marrow and beetroot soup?

Sounds a bit mad, but the chilli offsets the heat and it's luuuuvely.

Follow any veg curry recipe you like: if it's a coconut sauce it will be lurid pink, a tomato/ turmeric-y sauce will be hi-lighter orange.

Have you ever tried beetroot chilli? As is using cubes of beetroot instead of minced beef? I am a total carnivore but this is delicious!
