this serves 4.
900 g seasonal veg
225 g onion
1 garlic clove
1 tablespoon poilive oil.
for the white sauce
25g butter
25g plain flour
600ml milk
for the topping
55g cheese
55g palin flour
25g butter
25g oats.
preheat oven 200/400/gas 6.
prepage veg as appropriate and cut into largish pieces. roughly chop onion, crush garlic. Put into roasting dish and mix with oil. roast in preheated oven for 15 mins.
for topping, mix flour and butter and rub until like breadcrumbs. teh add cheese and oats. Set to one side.
Sauce - melt butter, add flour cook over gentle heat until mixture turns sandy in colour. gradually add milk beating all the time and cook until mixture thickens. continue to cook for another 5 mins over low heat.
Put veg on teh bottom of large square deep dish the add sauce. sprinkle topping over dish. cover with foil and bake for 15 mins. uncover and bake for another 15-20 mins until cheese topping is bubbling and golden.
