vegetable crumble from the Dinner Lady's cookbook

I was going to make this tonight but got home late and so didn't have time. I'd like to prepare as much of it as possible now ready for tomorrow. Do you think i could get away with roasting the veg tonight and making the crumble mixture and then leaving them in the fridge overnight and just make the sauce tomorrow?

Can I ask those with the Dinner Lady who rave about it- is it suitable for just two?

this serves 4.
900 g seasonal veg
225 g onion
1 garlic clove
1 tablespoon poilive oil.

for the white sauce
25g butter
25g plain flour
600ml milk

for the topping
55g cheese
55g palin flour
25g butter
25g oats.

preheat oven 200/400/gas 6.

prepage veg as appropriate and cut into largish pieces. roughly chop onion, crush garlic. Put into roasting dish and mix with oil. roast in preheated oven for 15 mins.

for topping, mix flour and butter and rub until like breadcrumbs. teh add cheese and oats. Set to one side.

Sauce - melt butter, add flour cook over gentle heat until mixture turns sandy in colour. gradually add milk beating all the time and cook until mixture thickens. continue to cook for another 5 mins over low heat.

Put veg on teh bottom of large square deep dish the add sauce. sprinkle topping over dish. cover with foil and bake for 15 mins. uncover and bake for another 15-20 mins until cheese topping is bubbling and golden.

We've having it later tonight so i'll post the verdict later.

It was delicious!!!
I did half as much again for the topping as I thought the amount of crumble seemed a bit stingy in the recipe. And I think I cooked the veg for longer that the stated time in the first instance (ie before adding the sauce and topping).

I used carrots, brocolli, cauliflower and parsnip.
forgot to say that if using broc or cauli to blanch them in boiling water for a few mins before roasting.
I prepared and roasted the veg last night and then just made the crumble and sauce tonight. The children will have it for lunch tomorrow so i'll let you know what it's like reheated.

Thanks McKenzie, I hadn't thought of using a white sauce. I do a tin of tomatoes in mine, and for some reason I always put in butter beans too. I think that's why I always have it with yoghurt - you wouldn't with the white sauce.

Have you tried anything else from the dinner lady's book? I've been thinking of having a look as my son's not exactly fussy but doesn't seem to like my cooking! What else has been a success?

this is the first thing I have tried even though the book has been on my shelf for about a year .
There was another thread on here just the other day recommending the book and that's what prompted me to use it.
Others recommended it highly.
What this space if you like as I shall be making the pork meat balls on sunday and somehting else (can't remember what and too lazy to go to kitchen and check my list) on tuesday.

I find the quantities lots for 4, so probably half for 2 would be more than enough.

I've cooked the meat lasagne and it was stunning. In fact I was at the library this morning and I borrowed it again to cook more from it.

For anyone who is interested, the vegetable crumble was just as nice reheated, if not nicer.
It's the pork meatballs going on the table in about 10 mins and so far they smell delicious!

well DH and I fought for the last of the veg crumble and the meat balls were devoured by everyone so I'd say yes, suitabel for all ages.

must say I bought both the dinner lady books and they are FANTASTIC!!!!

2 of the 3 of my sons dont like veg and they eat the dinner lady stuff

I bought the first one last week - was a bit disappointed that half of it is waffle which I will never read, but I have made three things, all very popular. The pea risotto with lemon chicken, sausage casserole and toad in the hole. Oh and choc chip muffins

Oh, my first attempt from this book was the risotto. Everyone, apart from me, hated it!
