Help. My veg box is a bit 'real'!

Just tried a new supplier and I've got a couple of suprises in there that I have no idea what to do with!

  • Radish

  • Mixed bean sprouts (aduki, mung, lentil, etc)

  • Also the ubiquitous cauliflour, and the kids are getting sick to death of my cauliflour cheese.

If anyone can point me in the direction of some good meal/snack ideas I'd be really grateful!

radish - grate it and put it on a salad or chop up - really nice and peppery tasting
mixed beans sprouts are lovely sprinkled on a salad or with houmous and pitta bread

No idea about radishes (never really seen the point of them myself). How about stir fry with noodles, and the bean sprouts? YOu could also put some bits of cauliflower in there with it, maybe. Or how about raw cauliflower with a dip? Or in a veg curry?

Beansprouts = stir fry, to which you can add carrot, courgette, shallot, red pepper or other veg. Yummy with brown rice. You can make sweet and sour sauce for it by mixing 2 tbsp each vinegar and soy sauce, 1 tbsp each honey and tomato puree (not ketchup), and a sprinkling of cornflour over a low heat.

Cauliflower makes a nice soup. Otherwise, how about a mild cauliflower and chickpea curry (with bayleaf, coriander and a tiny hint of a stronger spice), and creme fraiche?

Can't help on the radishes - have never seen the point of them myself...

Bean sprouts are also good in sandwiches with avocado and cucumber and mayo.

Radishes can be sliced and used in stir-fry or you can slice them and saute them briefly for a vegetable dish. Also great in salads. Kids sometimes don't like them because they are quite hot and peppery but lots of adults love them for the same reason.

ooooo, feeling sorry for the radishes now! unloved! unwanted! the kids won't eat bleedin' lettuce, so will pass to DH for one of his cooking experiments.

thank you so much for those stir fry and curry suggestions. we've got all those other ingredients. had forgotton classic cauliflower/curry combi. (and how to spell cauliflower, clearly!)

am going to have super immune and, errr, digestive system

Cauliflower also very nice in a sauce made with peanut butter.

Cauliflower is nice roasted with a sprinkling of ground cumin.

Radishes - just eat them with bread and good butter. Yum.

Bean sprouts - in a stirfry or would be nice in a sandwich with avocado and bacon. Or a salad with a very vinegary dressing.

OK, inspired types -- what about MY veg box which this week contains fennel, about a dozen diddy turnips, and a thing I think must be Swiss chard?

Fennel risotto - Chop fennel, reserving feathery bits,saute gently in butter & olive oil with onion & garlic (Celery good too if you have any). Stir in risotto rice, making sure it's all coated with oil. Add a glass of white wine & simmer till absorbed.

Meanwhile have a saucepan of hot stock (ideally veg cooking water - I freeze it - & a couple of cubes, or just water & stock cubes is fine) on the next cooker ring. Add to risotto a ladle full at a time, stirring gently.

Try rice after 20 minutes - if you like it really soft & creamy you'll probably need to give it up to 30.

Serve sprinkled with black pepper, the feathery bits off the fennel & (optional) parmesan.

Turnips - bleurgh. I always casserole them with beef or chicken for 14 month dd...

Swiss chard - pretend it's spinach & whack it in a curry. Strip the leaves off the stems & stems go in 5 minutes before the leaves.

We've just signed up to Abel & Cole today too !! Will no doubt be back on here asking for help when it arrives next week (watch it be boring brocolli and cauli now !!). Thought it would force us to be more adventurous !

No they're dead good! Just tend to take over your life a bit...you quite quickly start meal planning when you realise the alternative is a viciously expensive way of buying compost...

See this is what puts me off a bit. My children willingly eat brocolli, carrots, mangetout, baby corn (bleugghh!), cabbage and peas. And that is it. I'd be worried about getting a box full of kohl rabi, chard and jerusalem artichokes.

radishes are really nice, sliced finely then mixed with some beans like cannalini or whatever you have in. Add a teaspoon of tabasco, salt, and a bit of olive oil for a lovely peppery bean salad.

try making curry with the cauliflower - but go easy on the spices, as it is easy to overpower it. It is also very nice in soups, jsut stick it in with some leeks and potatoes.

cauliflower is lovely roasted as a side vegetable -just cut into sections, add salt, black pepper,some crushed garlic and a little olive oil and roast.
