... what is your idea of a healthy balanced day of food (for an adult)

breakfast - muesli or similar, glass OJ

lunch - tuna pasta salad, fruit, yoghurt

dinner - chicken, veg, new pots
fruit

evening/treat - glass of wine couple of digestive biscuits...

is that what you were after?

yes .. more ideas of cooked meals though

not the fish/veg/new pots

I always seem to resort to ratatouille and rice / minestrone soup as a staple of a healthy eating kick .. or oven roast veg

need other ideas now

how about veggie sausage casserole - high in protein, low in fat
cous cous with mixed herbs is a nice side dish for fish or chicken
salmon baked in the oven with loads of veggies (wrap it all in foil) is great and easy

baking chicken thighs or quarters with a tin of tomatoes, anchovies, and a bit of olive oil is really tasty

Brown rice seasoned with coriander cumin and tumeric is a nice side dish. You can add chopped raw veggies like peppers and onions etc too.

Really easy dish that I use is chicken stripped of skin and that bit of fat round it's neck end and cooked in a big pot with ratatouille type mix (I use onion, toms, aubergine, courgette, peppers) and spiced up with paprika - served with mint and lemon couscous.

homemade chicken soup, or veg soup (we love delia's slow roast root veg soup, and is v healthy)

lentil and veg curry

I use quite a lot of quorn for low fat, depends what you think of quorn though!

i like meat so mine are things like...
thin cut steak with teriyaki sauce and steamed greens
pork escalope with spice/jerk and salsa
skinless chicken thighs marinaded in yog and garlic with salad

you can have rice or bread or something, i prefer wine.

agree on curries. Mine are normally veggie or chicken with only a spoon of olive oil used to fry onion and garlic at the beginning.

2 medium sized onions
1 tsp fennel seeds
2 bay leaves
6 cloves garlic
2 heaped tsp grated ginger
1 lb chicken
2 heaped tsp turmeric
1 heaped tsp ground coriander
1 heaped tsp garam masala
2 tbsp tom puree
salt
chilli
tbsp plain yoghurt (low fat if you like!)

Fry onions with a pinch of salt, bay leaves and fennel seeds on low until onions mushy.
Add garlic, ginger and meat
Fry 2 mins
Add turmeric, coriander, garam, chili and paprika
Fry 1 minute
Add tom paste and yoghurt.
Add enough water to cover.
Cook til happy with it
Add fresh spinach and cook for a few mins.

one can fry onion in water (couple of tbsp) .. it works bizarrely with no change in taste

low fat coconut milk in waitrose, is about half the fat i think. i usually bung a bit of dessicated in too.

boil a whole chicken for about half an hour with onion and herbs, then roast in oven on high for another half an hour. gets rid of lots of fat, is crispy when hot and very nice cold next day. and you have made stock too. and it is a whole roast chicken in an hour.

you can make curries that are based around tomato sauces rather than creamy ones (like a balti)

I occasionally use the Waitrose website for ideas.

Recent discoveries include:

Peppered chicken in Lemon and Tarragon Sauce

Griddled chicken with Lemon and Garlic

Tea Marinated Salmon with Pak Choi

A healthy curry could be a Thai green/red one made with vegetables (am currently on the look out for a good ready made sauce/paste)

Pataks paste is good; I hardly ever use cream or coconut milk in curries tbh.
