And no convenience ready meal type foods or re-heats allowed!!!

For me it will be Pasta in veg & tomatoe sauce
Fry a few veg (onion, mushroom, celery, peppers usually). Add couple of tinnes tomatoes, garlic & tom puree, simmer. Add cooked pasta & ham/pepperoni and VIOLA. For me and DP I usually add crushed chillis too and turn it into an arrabiatta.

Usually makes enough to stick half in a oven dish, sprinkle with cheese & bake in oven for the next day - but I guess that would count as a re-heat

Noodles, roast chicken and broccoli and cheese.

Put broccoli in a covered dish, with a bit of water, and zap in the microwave. Cook noodles, and shred roast chichen.

Drain all and dump on plates - grated cheese on top.

I agree that pasta in tom sauce with veg very easy. New potatoes, grilled pork chops and veg pretty easy too.

Tomato and lentil soup

Fry one onion, couple stalks of chopped celery and large chopped carrot. Add tin of tomatoes, dash of lemon juice, pepper, chilli powder, pint of water, about 8 big spoonfuls of red lentils. Leave to cook until lentils are done. Blend if you wish. Bingo, big pan o'soup.

I love soup.

pasta salad.

cook pasta with 2 cloves garlic

chop cucumber, baby toms, chives, olives,

make dressing of two tbls red wine vinegar three tbl spoon olive oil, crush garlic cloves and add to dressing and mix everything together. Tis so delicious and left overs taste great cold the next day.

Roasted veg and chicken: chop various veggies (usually potatoes and whatever else I have in house basically) into small chunks and throw in to a pan with some chicken breasts, unpeeled garlic cloves and olive oil. Cook for about 35-45 mins, serve with salad leaves from garden.

erm the next would probably be pittas or wraps, with salad and hummus. Things like beans, avocado, grated cheese etc go really well with it

Split pea soup. Chuck ready-to-use split peas, chopped onion, lumps of potato and carrot in a pan with a load of water. Boil for a bit. Add a drop of liquid smoke if I have any. Tada!

Um, and a whole bunch of different dishes for non-convenience, I guess. I made ratatouille without really noticing this week. I have been making salads most days. Oh, there's a sausage meat/cream/mustard/pasta thing that is very quick, too.

Gnocchi - boil for 2 mins whilst cooking pancetta (or bacon lardons ) in a separate pan. Drain gnocchi, stir in big dollop of soft cheese, add pancetta. Voila.

Add peas too if you're behind on your veg count for the day, and serve with yummy fresh bread for extra carbs .

prob some sort of curry. Fry some onions, wth garlic and spices, add kidney beans/yellow lentils/chickpeas/potatos, add water and tomatoes and simmer til cooked.
I find spag bol really quick to make too.

Stuffed peppers - Chop the top off a pepper. Roast it in the oven until it starts to go soft. Fill with couscous mixed with cheese and pine nuts. Stick it back in the oven till the cheese melts. Easy! Also use leftover spag bol to stuff a pepper!

pea and bacon risotto. fry bacon and onion, add rice, herbs, peas, seasoning, pour over water. simmer until cooked, stir in grated parmigano reggiano. serve.

Easiest probably a pasta dish I make but it's not the quickest. Roast a whole chicken in the oven. Soak some sultanas in water. Cook pasta (I use Penne but you can use Tagliatelle) cut up chicken (skin and all) and toss with pasta. Pour in roasting juices, sultanas, some pine nuts and some chopped parsley. Eh voila! It's absolutely delicious.

Pasta and pesto but with the added excitement of ham, tomatoes and garlic, fried together for a few minutes and mixed in with the pesto at the end. Oh and broccoli too, to help the day's veg quota.

It's just about the only meal guaranteed to finish with clean plates all round at the end.

Also pasta with smoked salmon and cream (with lemon juice and chilli added and topped with dill). Pasta dishes tend to be the easiest. Tonight am doing another easy one though - Delia's Piedmont Roasted Peppers. Halve peppers and get rid of seeds, skin some toms in boiling water and chop them into quarters. Add two quarters per pepper half, along with some slivers of garlic, some chopped anchovy, olive oil and pepper. Roast in over on gas mark 200 for about 30-40 mins. Sprinkle with basil leaves. Eat with crusty bread.

i cook a big batch of pasta at begining of week and store in fridge in a sealed bag so then i just have to warm it in micro and add pesto,
kids dont do sandwhiches so normally use pasta at lunch
wasa bit concerned about salt intake as kids love feta olives and pesto so we make our own pesto quite alot to cut down on salt
