I usually just stick new potatoes straight into a roasting tin with some olive oil and sea salt and roast till cooked yum yum

DANCESwithnewlytannedlegs · 21/05/2007 15:53

This is a tip via a friend for really GOOD roast potatoes. If you want really, really tasty potatoes buy some goose fat. Parboil the potatoes, drain them and keep in the saucepan, then pour in some of the oil, put the lid back on then shake them about in the pan so they get mushed on the edges and covered in oil. Then put them in roasting tin with a bit more oil and herbs if you want. If you have no inclination to do the goose fat thing do the same but with olive oil. The shaking with oil in the pan is the key bit!

I am about to make roast pork for 6.15pm

but not requested by dh

anyway, cant help with new potates

would just roast them as they are for 35 mins

heifer · 21/05/2007 15:58

I use sunflower oil with alittle bit of olive oil, with ground salt and pepper..

Preheat in over, whilst potatoes are boiling (for about 10 mins)

Bash about whilst draining, then put in over for around 40 mins 200degrees...

Yummy...

Not sure I would mind DH telling me what what he would like for dinner, but not at lunch time... I need more time that that!...

Actually I would love it if DH told me what he fancied for dinner, then I wouldn't have to decide myself for 2 meals a day 7 days a week....

But I would want him to let me know before he left for work in the morning.. and there is no way he can seem to do that.... "I don't know, um, don't mind whatever you fancy cooking"....

ok, prawn stirfry it is then...

EmilyandLola · 21/05/2007 15:58

well, the chicken is in - not bothered about cooking the roast tbh, just wish I had some more warning.

Any way, so reckon just give them a wash, put in roasting tin, olive oil, sea salt... rosemary? thyme with that too?

new potatoes don't roast that well .. IMHO

I'd boil 'em, slice them and fry them in a little butter (maybe touch of garlic) for new potato style chips

bakedpotato · 21/05/2007 16:00

I don't think new pots would benefit from parboil and then bashing
That's good for floury pots but new pots are I think waxy
I would cut in half, rub in bit of oil, stick under roast and roast for an hour

rabbleraiser · 21/05/2007 16:00

The type of potato is extremely important. The Big Daddy of roasting potatoes is the Maris Piper, seconded by the King Edward. Without either of these, you're not on to a good start.

So assuming the MP or KE, cut fairly small (massive roasters are no good), and par-steam. Whilst they're steaming, wack the roasting tin in the oven with some oil/goosefat and get it really hot.

Remove potatoes from steamer, gently shake them a bit (that's how they get crispy), and drop them straight into the hot fat (standing well back).

Cook on a high temperature for approx. 40 mins.

They will be sooooooooooooo fine

rabbleraiser · 21/05/2007 16:01

Ha ha! Just realized you said 'new' potatoes.

OK - obviously don't peel them. Par-steam them (as per roasters) and drop them in hot fat (as per roasters) for about 40 mins (as per roasters!!!)

Roasted new potatoes are delicious. Good luck!

rabbleraiser · 21/05/2007 16:02

Oh, and cut them in half (unless tiny).

jangly · 21/05/2007 16:03

DANCES - that is such a good idea! Its always such a pain to get the potatoes coated with oil once you've put them in the roasting tin. That way would be much easier!
