hello all

Right, am thinking we should start adding a bit of fish to our diet, however I only like

tuna (tinned) and fish in breadcrumbs/batter , LOVE scampi and to be honest only really like fish for the tartare sauce!!

BUT i hardly ever have it cos i don't know what to have it with? Mash is all white and bland, rice is too dry with it - what do you all have?

Couscous? THere are some wonderful recipes for salmon and couscous.
Try this site for some ideas.
Fish pie... with potato (mashed) or puff pastry on top.
Kedgeree? (Mixed through rice)
There's so much.

Salmon steaks with couscous and manges tout and lots of lemony/garlicky melted butter. Easier than it sounds and salmon isn't too fishy iyswim.
Cheesey fish en croute: ready-made puff pastry, microwaved frozen cod fillets, tin of condensed celery/mushroom soup and a whole load of grated cheese, fold up into a rectangular flat pie thingy, make/leave some slits and brush with milk. Bake at 200 until risen and golden brown. With all that pastry you don't need other carbs, esp for evening meal. Can add defrosted frozen sweetcorn to the mix too.

utterlyconfused · 16/05/2007 21:07

Oh, but if you're sticking to the ones you mentioned... tuna with pasta, either in a cheesy sauce, with sweetcorn (or any chopped veg) or in a fantastic garlicky tomato sauce.
What else have you tried?

walbert · 16/05/2007 21:07

Loads and loads of parsley sauce made with full fat milk!

utterlyconfused · 16/05/2007 21:08

tuna fishcakes.
Cheesy tuna fishcakes.

coat chunks of salmon in flour egg and sesame seeds fry and serve with chinese dipping sauce, egg noodles and stirfry veg - egg fried rice isn't dry either.
or fish pie with scalloped potatoes instead of mashed. nigel slater recipe - tear up smoked mackeral [peppered if liked] pour over cream with a dash of mustard and layer potato slices.
people on here swear by fishfinger tortilla wraps - mayo and lettuce.
i like tuna and kidney bean salad - with mayo, onion and sweetcorn.
wrap tuna steaks in foil with a b it of oil and coriander seeds and grill/bbq

Hulababy · 16/05/2007 21:13

I eat quite a lot of fish. I serve it with oven baked wedges, chip, mash, rice, cous cous, roasted potatoes, baby new potatoes, pasta, anything really.

Wotzsaname · 16/05/2007 21:13

bbc food website

ThomCat · 16/05/2007 21:15

I like salmon with rice and spinach.

Elk · 16/05/2007 21:38

Old Fsshioned Fish Pie - haddock fillet cooked and chopped, and white sauce and chopped boiled egg, cover in mash and bake. (rough translation of recipe in good housekeeping)
I don't like fish much but that always goes down well.

Salmon - put in foil, drizzle with soy sauce, add chopped spring onions and ginger - cook for 10-15 mins in oven - serve with roast veggies (peppers/onions/carrots etc) and rice.

Bouquetsofdynomite · 16/05/2007 21:42

Further to the fishfinger wrap notion, I had a lovely sandwich containing a whole breaded cod fillet, cheese and mayo the other week. One of those freezer clearing serendipities.

Springadora · 16/05/2007 21:47

From what you say OP it sounds like you like things simple - how about good old fashioned baked spuds with tinned tuna and sweetcorn? or if you like scampi, do you like giant peeled prawns - you could stirfry em with green beans etc. And how about making tuna fishcakes with left over mash and some frozen peas - just bake them in the oven when you have mushed them into shape and crumbed them. Have fun!

Springadora · 16/05/2007 21:48

Ooh and tuan goes very well with noodles of course. Or brown rice and Worcestor sauce.

nappyaddict · 16/05/2007 22:17

mashed potato, boiled potatoes, jacket potato, salad, bread and butter, pasta, rice.

Bouquetsofdynomite · 16/05/2007 23:03

Does anyone really have mash left over?

brimfull · 16/05/2007 23:05

salad and rice

TricityBendix · 16/05/2007 23:09

Tuna and rice. Real comfort food.

Enough coooked rice for the people you're feeding, plus at least half a tin of tuna per person.

Plus egg, lemon juice, big dollop of tomato ketchup, salt and pepper. All mixed up and fried until cooked, a bit like you'd do bubble and squeal.

littledawley · 16/05/2007 23:12

Make breadcrumbs and add parmesan. Spread on top of any white fish, salmon or trout and bake in the oven. I add other things depending on the fish- trout is good with red peppers and rosemary, cod is lovely with lemon zest, parsley and toasted pine nuts.
Simple enough for every day but posh enough to serve up for guests with a green salad and new potatoes.

MrsSpoon · 16/05/2007 23:16

Love fish pie. Also like masses of roasted veg with salmon fried in a little olive oil, having that tomorrow night.

Birdly · 17/05/2007 11:27

You could try jazzing up your mash. Try frying some onion or leek and adding it to the mash - this gives it a bit more taste, and you can vary the veg you add. Try parsnips or swede in the mash instead. This is also a good way of hiding veg if your kids are veg-shy!
Agree that jacket potatoes with tuna (and sweetcorn?) are delicious too. Try home-made potato salad, or the lovely Jersey Royals that are in season now. Pink Fir Apple potatoes are delicious too, and their knobbly shape makes them interesting for kids to eat.
Put cold green beans, avocado, grated carrot, grated cheese, cold potatoes, sweetcorn etc in salads to make them more interesting. My kids love coleslaw, and will eat anything with coleslaw on top!

Gingerbear · 17/05/2007 11:30

salmon and jersey royal potatoes with lashings of butter and a rocket/feta/pinut salad with balsamic dressing.

If I was on death row, that is the meal I would have as my last.

honeybrown · 17/05/2007 11:31

What about a warm salmon, asparagus and new potato sald. Boil potatoes, steam asparagus and pan fry salmon. Layer in a dish, throw over a good handful of cress. Make a lemon vinaigrette - olive oil, lemon juice, dijon mustard, rock salt and fresh ground pepper. Pour over and voila!

honeybrown · 17/05/2007 11:32

duh... that would be salad of course
