what do you eat with fish? other than chips?

hello all

Right, am thinking we should start adding a bit of fish to our diet, however I only like

tuna (tinned) and fish in breadcrumbs/batter , LOVE scampi and to be honest only really like fish for the tartare sauce!!

BUT i hardly ever have it cos i don't know what to have it with? Mash is all white and bland, rice is too dry with it - what do you all have?

I think it would be fitting to share my dinner with the group, ideologically of course

have you tried cooking fish en papiette, which means in paper or foil?

What you do is get fillet of fish that you like, try whiting or haddock -200g per serving, and put some oil on a big piece of foil and rub some on the fish, then spoon over your favourite sauce - forgive me if you have a michelin star and I'm being patronising and presumptious about your taste - any cook-in or chicken tonight kind of jar sauce and then seal the edges over so your fish is wrapped nicely in a tent but not too tight .

Bake this in a preh-heated 180 degree oven for 10 minutes, take out and let it stand unwrapped for 4 mintues and then serve wit heaps of your favourite veg, you really don't need any carbs with it. It makes its own sauce and is impossible to over cook

Salmon (sometimes topped with pesto , sometimes with a little salsa) with cous-cous, asparagus/green beans and then mini roastie potatoes and sweet potatoes (covered with rosemary or thyme).

I really love tuna or salmon with lemon pepper, served with rice salad (or even just plain rice and peas mixed togather)- eat that a lot

You can also do tinned una in a can of campbells condensed mushroom soup with peas and sweetcorn, as a cheap tuna casserole (school recipe from aeons back LOL)

Another one we like is trout with toasted almonds and jersey potatoes and 'nice' vegetables (like mange-tout, baby corns etc)

not fancy (at school helping with fayre all day, and baking for it today so need a break from oven) they're from tesco. We have frozen green beans and new potatoes to serve. Scrummy.

we have a fab salad with fish.
Watermelon slices, spinach and watercress leaves, rocket, toasted pinenuts, a tiny bit of crumbled goats cheese, and dressed with olive oil, lemon juice and a touch of soy sauce.

We love fish with spinach.

I grease an ovenproof dish, put a bag of spinach in, then different kinds of fish (whatever you like), and then whish some eggs and pour over spinach and fish, some grated cheese on top and in the oven for about half and hour at 200 degree (but since this is a "homemade" recipee please don't quote me on that one)

I usually serve with mini sweetcorn and beans or asparagus.

Granted the children don't like the spinach but they eat the rest.

Kedgeree - mix fish (I use cooked smoked haddock or salmon, but also works with tuna or tinned salmon) with cooked basmati rice and chopped hard-boiled eggs, and add a teaspoon of curry paste.

Salsa Verde - jazzes up any fish. Put large amount fresh parsley with garlic, lemon juice, olive oil and a few anchovies and whizz it all up together in the blender.

I am in the process making fish and broccoli pie in cheese sauce (fisherman's pie) for the kids. A great comfort food and they love it.

I put in whole broc florets now, and have big chunks of cod (frozen then cooked in microwave) at the bottom.

When the kids were little I used to overcook the brocolli and flake the fish. add the cheese sauce (pkt or freshly) and put the mash on top (sometimes use Mr Mash even!)

Also you should try fresh salmon done on a hotplate with salad and an all-time favourite - Tuna and sweetcorn in ragu-like sauce with pasta. (fast food!)

Fish with baby new potatoes with a knob of butter on them and some peas. Depending on the fish a mild butter sauce perhaps too. Mmmmm. Making me hungry now!

broccoli and peas are good, also have you tried mashed celeriac with some olive oil and black pepper mixed in? very tasty and also makes you sound poncey and trendy!

dancingtina-you could have some roasted vegetables like courgette,pepper,tomatos.
Or butter beans mashed with creme fraiche,garlic and spinach.

You could have jacket potatos or mashed sweet potato.

At home depends on the kind of fish we are having we prepare different sides.

Salmon

Side 1- salad leaves with avocado and lovely dressing made with olive oil,vinegar, maple sirup, limes, salt and pepper.

Side 2- quinoa cooked in vegetable stock with fried abergines and courgettes.

Monkish- cookded in salsa verde

Side 1- oriental noodles and asparragus.

Side 2 - rice with pesto sauce and carrots

The options are endless.... we love fist so much... at the moment I am eating a salad with sardines, avocado and cooked salty prawns. Yum yum!

Slightly white-trash type of thing but I love fishfinger casserole - 10 fishfingers in oven proof dish with few mushrooms sliced over the top, then mix can of campbells condensed mushroom soup, small glass white wine (can be left out but you cook the alcohol away) and splosh of milk (more milk if omitting wine) together and pour over the fingers. Cook for 45mins at 180 stirring once half way thru. Might sound grim but the coating on the fingers mixes in to a lovely creamy rich sauce and you are left with chunks of cod. Serve with jkt pot and veg, yum yum

We make cajun salmon with salad and garlic bread (also cajun chicken). Total prep time 4 mins, cooking time 25 mins.

Cajun.....

Olive oil on a plate, some cajun spice (quite a bit) and a huge squeeze of lemon ' lime. Mix and cover your salmon / chicken breasts with it. Bake in a foil parcel in the oven at 180 degrees for 25 mins.

Delish!

or you could make cheesy tuna pie....

Tinned tuna mixed with enough cheese sauce to produce a really thick mixture + sweetcorn +/- peas + mixed herbs all topped with mashed potato (which is why the tuna mix should be thick or the mash falls in) - sprinkle with more cheese (or mix cheese in with the mash) if you fancy and bake for half an hour or until golden at 180 degrees.
