What are your best quick or zero effort puddings?

Just that. We've got people over later in the week on a day when I'm going to be busy. I'm going to do Nigella's Spanish chicken bake for main and just pre-bought fancy nibble bits in place of starter. So, hit me with your best very quick puddings. (I will be able to do in advance as am around at home all day, it must just be quick though to fit around many noisy small children!) Thsnks.

I usually do Eton Mess, a crumble etc. Or I just buy a dessert from the supermarket (but I'm quite lazy!)

Another vote for Eton Mess. Shop bought meringues, cream whipped alone or with brandy and some chopped strawberries.

Lemon posset! I like Tom Kerridge's recipe best and it's really easy to find on google. The recipe also contains a recipe for biscuits to go with but I normally just serve it with bought ones. The basic gist is you just boil cream and sugar together, stir in lemon juice and pour into little pots or glasses and chill. Et voila! It is properly gorgeous and people are always super impressed when I serve it.

Good quality lemon curd. Good quality vanilla ice-cream. Meringues.
Bash up the meringues, mix with the ice cream and lemon curd and freeze into a cake tin.
Take out of freezer to make it easier to cut.
Divine!!

Berries with a white chocolate sauce.

Grab a bag of frozen berries from the supermarket. Take a block of decent white chocolate, break it into a pouring jug, put a glug of cream in. Microwave until the chocolate is melted and it's a nice pouring consistency (add more cream if needs be).

Serve frozen berries with the warm chocolate sauce to pour over them. It's delicious!

My 10 year old did us smashed up meringues, sliced strawberries, strawberry cheesecake icecream and pouring cream for pudding on sunday. I luffs him. Grin

Nuts (with posh dried fruit) full fat greek yogurt, honey and some fruit.

Lovely icecream with a plate filled with different stuff to DIY top it with. Bascially grown up ice cream factory.

Buy some dulche de leche.

Or just do cheese.

GU chocolate pots. Raspberries. Winner. Or the GU choc souffle things. Or the GU cheesecakes. Anything GU plus fruit.

Raspberry sorbet. Crumbled up ginger biscuits. Exotic fruit.

Exotic fruit. Icecream.

Figs. Cream fresh. Pistachio and honey.

Crumble. Empty a pack of frozen summer fruits into a bowl and sprinkle ready made crumble over it. Bung in the oven and it's done.

Bread and butter pudding using chopped up chocolate chip brioche, left to soak in ready made custard for an hour or so then baked. Proper lazy pudding.

Chop rhubarb into inch long bits and add to saucepan with a splash of water and some sugar (how much depends on your rhubarb and tastes). Boil until soft and allow to cool. Put in glass bowls then top with marscapone and lemon curd lightly mixed together and sprinkle crushed ginger biscuits on top.

All can be done in advance except the biscuits

Banana Foster, sliced bananas tossed on hot butter with a splosh of booze poured over vanilla ice cream.

Strawberries half dipped in melted dark chocolate, served with thick cream or mascarpone.

Chelsea I do a rhubarb compote just like that but stir in the juice and grated rind of a large orange as it's cooling, it's so summery isn't it. Wine

Lemon (or lime) flan.

Blitz biscuits with melted butter (digestives, or ginger biscuits or chocolate ones)and line a flan tin, then chill it in the fridge.

Mix a large tin of condensed milk with the same amount of double or whipping cream, and whisk in the juice and zest of the lemons or limes - 2 lemons or 3 limes, as a guesstimate, but basically add to taste.

Pour over the chilled base, and chill in the fridge for an hour or so, and the acid in the fruit juice will set the condensed milk and cream mix so you can slice it like a flan or cheesecake.

Or make white chocolate ganache by pouring hot cream over the same amount of chopped up white chocolate (e.g. 200g white chocolate and 200ml cream), stir until the chocolate has melted, and pour over raspberries and strawberries. Chill.

Rhubarb fool - stew rhubarb with a tiny bit of water, and add sugar to taste, then when cool, blitz together with ready made cream custard. Chill.
