Healthy, veggie meal I can add to my weekly repertoire, one that won't make meat-loving dh retire to the shed in disgust?

do you like spicey food? Ainsley Harriot's Low Fat Meals in Minutes has some very nice veggie meals in it that my carniverous dh also approves of.
Also, how about something like falafel in tortilla wraps with lettuce and hummous?

oh, you're like us then with cookery books!
we use that particular one a lot though. The veggie curry is nice with a naan bread, and also the black-eyed bean and squash stew. I find that we usually manage the amount meant for four just between the two of us though - good job the meals are low-fat.

plain white risotto with asparagus is yum. and delia online has a good veggie moussakka. she akes it a bit of a fanny, though, but i use the food processor to slice the aubergine up thinly and don't do her topping and don't cook it in advance of going in the oven. instead i mix yoghurt and an egg and grated cheese, it's delicious.

Red Pepper lasagne - it's a Weightwatchers recipe, but bascially you roast 4 red peppers until skins are black, cool in plastic bag then peel.

Fry an onion & garlic & some mushrooms, about 225gs I think. Add tin of tomatoes, tom puree. Put lasagne sheet on bottom of tray, then mixture, then more lasagne. Topping is approx half a pint of milk thickened with cornflour and a tub of very low fat soft cheese with garlic & herbs mixed in, and a little half fat cheese finely grated on the top. You can adapt that to make it less low fat.

DH is veggie so I do this one when we have friends round and it always seems to go down well with everyone.

Or Aubergene madras: Cut two aubergenes in half and spread 1 tsp of Pataks Madras curry paste on each half. Criss cross diagonally each one both ways to make diamond shapes but not cutting right through the skin. Roast in oven until soft. Meanwhile dry fry/fry an onion or two cut into chunks and a clove of garlic. When aubergene is soft but through the lines to make chunks. Add to the onion & garlic, add 5 fl oz water and some veg stock. Simmer rapidly for about 5 - 10 mins (add more water if it sticks. Then stir in 150g low fat total greek yoghurt and some chopped coriander.

well, according to delia you dice and fry it, but who's got the tie. i use the magimix to cut the lices really think then layer them up. it's really just a normal moussakka but with a mix of red pepper, green lentils and puy lentils, toms, tom puree and red wine as the sauce. it's really nice, actually. but her topping is a faff that requires more cooking, so again who can be bothered when the alternative is to crack an egg and grate some cheese into half a big tub of yog?
once you've made the tom sauce mine's a five minute construction job and an hour in the oven. i make doubles of the sauce and freeze it.

I've discovered that if you boil up puy lentils in (good) veg stock and red wine, with some sun-dried tomatoes chopped into it, all you have to do at the end is bung in something like cubes of feta cheese. Madly simple.

Ah. I bloodly love puy lentils. They're quite posh, you know. I'm going to make them for a veggie Sunday lunch, along with pommes dauphinoise which are ahem slightly lower in the healthy eating stakes.
