sausage , leek and cream
fry sausages, chuck in chopped leeks, stir in a lttle cream and then serve with pasta and crusty bread. quick, simple and yummy

Cut them into logs, put into a casserole (fairly tight fitting) with a bit of butter on top of each one, splash over some white wine, lots of black pepper, cover and put in oven for 40 minutes ish

I hate leeks but for the purposes of marital harmony

fry leeks, bacon bits and mushrooms with a clove of garlic - add a tub of half fat creme fraiche - stir till blended

pour over pasta

Par boil the leeks whole (having chopped the ends off). Wrap each leek in ham and place in a single layer in an oven proof dish. Make a cheese sauce and pour this over the leeks. Top with grated cheese and breadcrumbs and pop in oven until golden. Serve with homemade potato wedges.

cod - is that just like steamed leeks

foxinsocks - I do a lovely leek and bacon pasta, and a leek and potato soup they're so lovely We've had both of those this fortnight though so need more ideas...

Okay I will show my culinary ignorance here.

How is parboiling different to normal boiling?
What sort of ham? Parma?
And how do you make a cheese sauce?

Par boiling is part boiling. So you don't let them get overcooked. I tend to by a good thick sliced ham from the deli cointer. Not parma ham, just a traditional ham. To make the cheese sauce you melt butter in a pan, add plower until you have a small ball, then slowly add milk stiring all the time until you have the correct amount, add salt, pepper, teaspoon on mustard, nutmeg, and grated cheese.

i absolutely love leeks, in soups, steamed or whatever.
the best thing i make is leek 'meatballs'. boil the leeks and one onion until soft, then strain till the water is out.
make meatballs as always, but use only 1/4 amount of the meat you would regularly use, and the rest, the leeks and onion.
