basic tom sauce for pasta recipe please!

fry onion add garlic, add tin tomatoes bring to boil simmer for 30 mins (tbsp basil, 1/2 tbsp oregano, pinch rosemary)

or fry onion and bacon / pancetta, add garlic, add tin tomatoes and basil and simmer for 30 mins

or fry onion and garlic .. add tin tomatoes veg of choice (mushrooms, peppers, courgettes etc) basil, oregano, rosemary simmer as before

Tomato sauce

Dice an onion really small and sweat it slowly in oil till it softens (low heat) then add a tablespoon of tom puree and garlic (? 1 clove)

Stir around briefly

Add a splash of old wine if you have it to deglaze the pan, then add a carton of passata and some sugar to taste. I also add a drop of Tabasco. It will look pretty unexciting a tthis point?BUT let it simmer slowly for 30 mins or until it thickens and turns dark red and it goes very sweet and nice.

Add veg to taste and simmer or parmesan on top of pasta.

1 can of chopped tomatoes, squirt of tomato puree, little bit of pepper, dash of olive oil and some basil (and garlic if you like). For a spicy one, add in some chilli paste or flakes or alternatively oregano. For a posh one use sun dried tomato paste instead of tomato puree.

Blend it all up and heat and away ya go!!!

i always do
2 tins chopped toms.
onions
garlic pste
tom paste
bit of that posh stuff called pesto erm paste

chuck in the frozen veggies.

that is the custy pasta sauce.

2 tins chopped toatoes
one red onion fry up with a clove of garlic.
Sling in toms, whisk up in the food processor to make sauce. Ready and if you make a huge batch it freezes dead good.
I add in some steamed brocilli and whiz together in the sauce in the food processor..they have never noticed!
