best way to poach an egg

Or an idea of how to peel a soft boiled egg without it breaking apart??

I do mine the "Ottolenghi" way - I learnt it from Plenty.
Bring water to the boil, add a little vinegar.
Break the egg into a cup and gently pour the egg into the boiling water. Turn heat off straight away and leave it for 4 minutes.
Scoop egg out with slotted spoon - ta da!

It works :)

Put water on to boil

Large mug, clingfilm and some eggs obviously

Stick the clingfilm into the mug with the excess clingfilm hanging over the sides. Break egg into mug, wrap egg in clingfilm and stick into the now boiled water for exactly 5 minutes.

Perfect poached eggs

Still trying to figure the boiled egg out though

Boiling water, very fresh eggs.

Swirl the water with spoon in pan and drop in eggs.

No need for vinegar if fresh.

Perfect eggs. That dont taste of vinegar!

I dont normally. I just add vinegar. I mean mine are alright but they seem to always break apart... Will definitely try your suggestions as I'm on a diet and love eggs. if I cant fry them boiling/poaching seems to be the healthiest way...

Vinegar is vile! Just use the freshest possible eggs, laid this morning or yesterday is the only way. All my family can poach amazing eggs, even the children, because of the eggs being fresh!

So I'm guessing Asda eggs cant be that fresh?? Where do you get day old eggs from I'm a city girl with no clue

double Diet fried eggs as below :

Spray frying pan with low cal spray, add your eggs let them heat up for a second then drop in some water (not enough to cover the eggs, just enough for the bottom of the pan) stick a lid on the pan, turn down to lowest heat and let them fry.

They dont taste actually fried but its the best your gonna get not using oil!

Boil a small pan of water. Break egg into a cup. Turn off the heat in the pan, tip in the egg, put kid on pan and remove after 2 mins with a slotted spoon.

You are all doing this the hard way.

Get a mug, add splash of water. Crack in an egg. Put in microwave on top power, stand by microwave. After about 30 secs you will hear it pop. Open microwave door immediately. Tip out the water. You now have a perfect poached egg in a perfect circle.

And for easy peel soft boiled eggs you need old eggs they are easier to peel it's easier to find the filmy bit on them under the shell if you know what I mean?! Not old as in gone off Grin just old as in not freshly laid!

Oooo I like the microwave tip, I often take an egg to work and scramble in the microwave - will have a practice at poaching one now.

apparently, steaming eggs (rather than boiling them) means you can peel them super-easily. I've never tried...

I find not have too much water in the pan - just enough to cover the egg when you tip it in. Very fresh eggs, simmering not boiling water.

I always thought you couldn't cook eggs in microwave - isn't there a danger the yolk will explode (or did my mum lie to me?) Grin

I do mine in a deep frying pan, good inch/two inches water, bring to boil

turn down, shimmy eggs in gently, I don't swirl the water, cos you can't do it for the second one and I am greedy enough to want two eggs

lid onto pan and check after three ish munutes.

I only poach our own chicken eggs, as above, hop eggs are rarely fresh enough

I read somewhere about putting the egg in the shell into the boiling water for 1 minute, which sets the very outer layer of white then cracking it and carrying on as normal, but cos I use a frying pan there's never enough to cover the eggs and I never remember to try this in another pan.

oh and watch the microwaving, a work colleague did similar, as she opened the microwave the egg exploded right in her face, she had lots of really nasty tiny burns all over her face, eye lid and eye

she was lucky to flatshare with an optician, with the presence of mind to hurl her face right under the cold tap but even so the burns were a great deal nastier that you'd have expected from a hottish egg.
