Dp and dd1 love pies! DD2 and I like pies, but the kinds of pies we all like are rather different. So I'm thinking that I could buy some individual pie dishes and make different pies, but how do I do that without a whole load of faff, please?

Dp and dd2 like meat, so maybe I could stick something meaty in the slow cooker and let it turn itself into a pie filling? As a veggie, though, I have no idea how to do this! Or is there some way I could just buy ready cooked chicken, and somehow turn that into a pie filling?

I like things like spinach and feta, or leek and potato so that's easy to make in just small quantities and no real faff. Any other ideas for faff-free veggie ones?

Please help our pie dreams to come true! Grin

I seem to have a pie thing going on.

I ended up making this yesterday and it was really lovely. You could cook twice the amount of lamb and freeze it which would make it really simple, you would get three or even four meals for two people out of the lamb (my pack was 400g and it fed DH who eats a lot and two others with 1/4 left).

Then when assembling the pie you could just make a veggie filo affair and the lamb one.

Mind you, I think lamb, even happy lamb, would be hard to cook for a veggie. I don't eat much meat and I hate the smell and draining the fat off.

Actually, make that minimum of four or even five or six meals.

Hmmm - not sure about cooking lamb! BUT the filo pie concept is a good one, and I will deffo try one/several. Grin

I thought as much remus, we eat meat three times a week max here which is a compromise on all sides but I don't like cooking lamb.

I made a delicious veg stew today with indian spices and coconut milk, I made it up (was slightly worried as my made up dishes with spices are not always fabulous), god it was lovely,

Chicken might be a good substitute for the lamb? Chicken and apricot is nice.

Lovely link remus, I am nearly 50 and haven't got into the swing of things like Pinterest, I would never have thought to look there for recipes.

That one looks really good, although I'd probably cheat and use bought pastry these days. I like the idea of roasting vege and then mixing with other delicious items, then shoving in a pie!

Marks and spencer do some fantastic tinned stuff that goes really well into a pie - chunky beef in sauce, chunky chicken in white sauce, and various curries, chillis, rendang if you want to get adventurous.

You couldn't use bought pastry remus, it wouldn't contain the parmesan Smile!! I reckon the polenta would improve it too.

Hi I got two small 17cm pie dishes for Christmas but I can't find any recipes! Any ideas?

Am thinking of starting simple with a condensed soup or something but just have no idea how long to put them in the oven for etc.

Any hints tips our recipes welcome thank you!

Could always add parmesan to the pie. It might not be quite the same but would still be good, I think.

I used to make my own pastry and then realised that our local shop sells stuff that is better than mine, and not all that much more expensive than buying the ingredients and making myself.
